INGREDIENTS
- 12 tablespoons butter, room temperature
- 1/4 cup bacon grease (can be replaced with butter)
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1/4 cup pure maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon maple extract
- 2 3/4 cup flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 12 ounces bacon (approximately 1 1/4 cups), cooked and diced
- 3/4 cup chocolate chips
- 1/2 cup caramel baking bits
INSTRUCTIONS
Personally, I like to cook my bacon in the oven for ease. Lay bacon on a rack placed over a rimmed cookie sheet. Place in a preheated 375-degree oven for 15-20 minutes until the bacon is cooked. Remove from the oven and let cool. Drain and reserve grease for cookies.
Cream together butter, bacon grease, and sugars until light and fluffy, about 3-5 minutes.
Add eggs, one at a time, followed by vanilla and maple extracts. Mix to incorporate.
Add flour, salt, and baking soda. Mix until no dry ingredients remain.
Add bacon, chocolate chips, and caramel bits. If not using a heavy-duty stand mixer, it may be best to fold these in by hand.
Drop cookie dough (approximately 2 tablespoons in size) on a baking sheet and bake in a preheated 350-degree oven for 12-15 minutes until the edges are golden and just set.
Remove from oven and let cool on baking sheet for 5 minutes. Then transfer to a cooling rack to cool completely.
