1 1/2 cups maple syrup 2 tablespoons chili sauce 2 tablespoons cider vinegar 1 1/2 tablespoons onion -- chopped 1 tablespoon Worcestershire sauce 1 teaspoon salt 1/2 teaspoon dry mustard 1/8 teaspoon black pepper 2 pounds pork spareribs Combine all ingredients except spare ribs and bring to a boil. Wipe spareribs with damp paper towels. Brush sauce on both sides of ribs. Place in a shallow, open roasting pan and bake for 1-1/2 hours, basting frequently with remaining sauce and turning to glaze.

Mom's Maple Syrup BBQ Ribs
These ribs hit different, as the kids would say. Sweeter, but not overpowering, with just a hint of heat and packed end-to-end in flavour with a wonderful glaze!
Special thanks to@SmokinJoesPitBBQfor the idea of putting two things together, reducing and making the glaze – in my cook, maple syrup and BBQ sauce.
For these ribs I follow the Meathead rib process – dry brine first, then use his Magic Dust rib rub, which has no salt and is brown sugar forward.

INGREDIENTS Ribs 3 pound rack St. Louis cut (preferably) Spare Ribs (1360g) , rinsed and patted dry 1 Tablespoon Kosher Salt or Sea Salt (15g) fresh cracked Black Pepper to taste 1 cup Apple Juice (240ml) Bourbon-Maple Glaze 1/2 cup Apple Juice (120ml) 1/2 cup Maple Syrup (120ml) 1/4 cup Bourbon (60ml) 1/4 cup Tomato Paste (60ml) 1 Tablespoon Apple Cider Vinegar (15ml) 1 Tablespoon Fish Sauce (15ml) (optional but very tasty) 2 Tablespoons Brown Sugar (30g) 1 teaspoon Kosher Salt or Sea Salt (5g)
