Pan Seared Pork Chop with Maple Apple Sauce
Serves 4-5 People
5 (1 inch thick pork chops)
1 tbsp kosher salt
1 tbsp black pepper
1 tbsp Onion powder
1 tbsp garlic powder
2 tbsp butter
2 tbsp cooking oil
Sweet apple sauce:
1/4 cup maple syrup
4 tbsp honey
1/4 cup unsweetened apple sauce
2 tbsp apple cider vinegar
Sous the pork for 1 hour at 140 degrees, then pan sear for 2 minutes each side.

Now that winter is in full swing, its time to make sure we're using all of home canned goods. Back in the fall we canned a lot of applesauce. Using that applesauce we made this delicious apple sauce cake with a maple buttercream frosting. Ingredients list below but be sure to watch the video to know how to mix the ingredients appropriately

Cake:
1 stick (1/2 cup) unsalted butter, very soft
1 1/2 cups sugar
1/2 cup packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups applesauce
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon allspice
Maple Buttercream:
1 cup (2 sticks) unsalted butter, softened
2 cups powdered sugar
1/2 cup maple syrup
2 teaspoons vanilla extract
pinch of salt

Savor Door County - Maple Cinnamon Apple Sauce
Savor the local flavors of Door County with these fun and easy recipes.
INGREDIENTS
3 Gala apples (or another variety of sweet red apple)
3 Granny Smith or pippin apples
¼ cup plus 2 tablespoons real maple syrup*
1 tablespoon ground cinnamon
1 tablespoon fresh lemon juice (or more to taste)
dash of sea salt
INSTRUCTIONS
Peel, core and chop the apples into 2-inch chunks. In a heavy, nonreactive Dutch oven or saucepan over medium heat, combine the apple chunks, maple syrup, cinnamon and lemon juice. Cover and simmer for about 12 minutes, or until the apples have softened up a bit.
Uncover the pot and continue cooking, stirring occasionally to break up the larger chunks, until the apples are soft but still have some texture (5 to 10 minutes). Remove from heat and, if necessary, add more maple syrup, cinnamon or lemon juice, to taste. Serve warm or chilled; let it cool to room temperature before storing it in the fridge.

PORK ROAST:
• 1 (2 to 3 pound) pork loin trimmed and tied
• 1 ½ teaspoons salt
• 1/2 teaspoon black pepper
• 1 tablespoon olive oil
• 2 tablespoons dijon mustard
• 1 tablespoon apple cider vinegar
APPLE GLAZE:
• 2 tablespoons butter
• 1 tablespoon cornstarch
• 1 cup apple juice
• 1 tablespoon dijon mustard
• 1 tablespoon brown sugar
• 1 teaspoon apple cider vinegar

1️⃣ 00:00:31 - Preheat oven to 375 degrees. Season the pork loin with salt and pepper.
2️⃣ 00:00:44 - Heat the olive oil in a heavy, oven-safe skillet over medium-high heat. Sear the loin in the skillet until all sides are browned, about 2 to 3 minutes per side.
3️⃣ 00:01:14 - In a small bowl, whisk together dijon mustard and apple cider vinegar. Brush over pork roast.
4️⃣ 00:01:30 - Place skillet in the oven and cook pork to an internal temperature of 145 degrees, about 30 to 40 minutes depending on the size of the roast. Use a probe thermometer for accuracy.
5️⃣ 00:01:50 - Meanwhile, make the apple glaze by melting the butter in a saucepan over medium high heat. Whisk in cornstarch until all specks of white are absorbed. Pour in apple juice and whisk in dijon mustard, brown sugar, and cider vinegar. Continue to whisk until sauce is thickened, which should only take a couple of minutes.

Homemade Maple Apple Pork Breakfast Sausages Recipe This is a collab with the @2 Guys & A Cooler channel and their Celebration Of Sausage Project. I encourage you all to check out their channel and follow along to see what sausages a bunch of YouTubers are making this month. Here's the playlist:
Ingredients:
2.25 Kg (5 pounds) pork butt / shoulder
1 small onion
1 large apple
22.5g (4 tsp) coarse salt
10 mL (2 tsp) dried sage
5 mL (1 tsp) dry mustard
5 mL (1 tsp) cracked black pepper
5 mL (1 tsp) red pepper flakes
75 mL (1/3 cup) maple syrup
6-8’ sheep casing
Method:
Cut up the porkso that it's in strips or cubes that will fit through your grinder.
Place the meat in the freezer to firm up for about an hour.
Mix together your spices, prep your casings, peel and chop the onion and apple.
Grind the meat through a coarse plate, then place back in the fridge.
Switch to a fine plate; mix the spices and maple syrup into the meat, and then grind again.
Grind a third time, if you want an emulsified sausage.
Set up your stuffer with sheep casings and stuff.
Poke holes to allow air to escape and then refrigerate overnight uncovered.
Package and freeze any that you are not cooking immediately.
