Here is what you'll need!
Mango Tart
Servings: 4-6
INGREDIENTS
Crust
1 egg
½ cup butter, softened and cut into 1-inch cubes
⅔ cup sugar
2 cups flour
Filling
2 mango
2 ounces cream cheese, softened
⅓ cup Greek yogurt
½ teaspoon orange zest
2 tablespoons sugar
2 tablespoons orange juice
1 teaspoon vanilla
PREPARATION
Preheat the oven to 375˚F/190˚C.
In a large bowl, beat the egg. Then add the butter and sugar and mix. Add the flour and mix until combined. The dough will be crumbly in your hand.
Transfer the crust mixture into a greased 8-inch tart pan one handful at a time, pressing it down to create an even, thin layer over the entire pan, about ¼ inch. Prick the crust with a fork to prevent it from puffing up in the oven.
Bake the crust for 30-40 minutes, or until golden brown.
On a cutting board, cut off a half inch off the bottom and top off the mango to give it a flat base. Standing it upright, make exterior slices from the top to bottom to take the skin off. Remove the meat from the sides and thinly slice.
In a medium bowl, combine the cream cheese, Greek yogurt, orange zest, sugar, orange juice, and vanilla.
Transfer the yogurt mixture to the cooled tart crust. Starting from the outer edge, place mango slices in a circular pattern, making full rotations all the way to the center.
Chill the fruit tart for at least an hour.

- 1 kg Mango cubed
- 1 tbsp Granulated Sugar
- 1 tbsp Cornstarch
- A Pinch of Salt
Pie Crust:
- 340 g Flour
- 225 g Cold Butter cubed
- 7 tbsp Ice Water
- 1 tbsp Apple Cider Vinegar
- 1 tsp Salt

Ingredients:
For the crust:
200g Graham crackers/biscuits
6 tablespoons (90g) Malted butter
1 tablespoon Milk
For the cheesecake:
3½ cups (800g) Cream cheese
1 cup (200g) Sugar
3/4 cup (180g) Mango Puree
4 Eggs
1 teaspoon Vanilla extract
1/4 cup (60ml) Heavy cream
1/2 cup (115g) Sour cream
Orange/lemon zest
1½ tablespoons Cornstarch
For topping:
2 Mangos, cubed
1 tablespoon Sugar
1½ tablespoons Cornstarch
1/4 cup (60ml) Water
Directions:
1. Make the crust: Preheat oven to 325°F (160°C).
2. In a food processor crush cookies into fine crumbs. Add melted butter, milk and pulse until combined. Press into bottom of 9-inch (23cm) springform pan. Bake for 7-8 minutes. Set aside while making the filling.
3. Make the filling: In a large bowl beat cream cheese and sugar until smooth. Add mango puree and whisk until smooth. Add eggs, one at the time, beating to combine after each addition. Do not over beat. Add vanilla extract, sour cream, heavy cream, salt and beat until smooth. Add cornstarch and beat until incorporated. Do not over beat.
4. Bake the cheesecake: Place the pan on a large piece of foil, and fold the foil up the sides of the pan. Pour the filling over the crust, place the pan inside a roasting pan. Fill the roasting pan with enough hot water to go halfway up the sides of the springform pan. Bake for 45-55 minutes or until the edge is set but the center jiggles slightly. Turn off the heat and leave it another hour in the oven. Let cool to room temperature for one hour, then refrigerate for at least 4 hours or overnight.
5. Make the topping: place all ingredients into a saucepan and cook until thickens, about 4-5 minutes. Turn the heat off and allow to cool.
6. Spread the topping over the cheesecake. Refrigerate until ready to serve.

Ingredients List-
- 1 whole mango diced into tiny cubes
- 1 whole mango sliced thinly for garnish
Pie Crust -
- 2 cups graham crackers crushed
- 1 tbsp. sugar (optional)
- 1/2 cup melted butter
- 9 or 10-inch pie pan
Chill in fridge while making the cream filling.
Mango Cream-
- 1/2 cup sugar
- 4 oz. whipped cream/heavy cream
- 4 oz cream cheese
- 2 cups mango puree
- 2 or 3 packets of Knox gelatin (2 for softer or 3 for thicker)
Whipped Topping-
- 1/2 cup heavy cream
- 1 tbsp. icing sugar
- 1/2 tsp. vanilla
Using a blender- mix cream, cream cheese, mango puree, and sugar... blend together.
Boil 1/4 cup of water, as it starts boiling, add Knox gelatin. Mix well.
Add hot liquid to the mango mixture and blend well for 1 minute.
Add diced mango, mix and pour into pie crust. Refrigerate for at least 6 hours or overnight.
Garnish with fresh mangoes and whipped cream... ENJOY!
