The Original Fantasy Fudge- The PERFECT fudge for the Holidays
This recipe is the ORIGINAL Fantasy Fudge that used to be printed on the Kraft Marshmallow Creme jars from loooooong ago! I remember this recipe from when I was a child (back in the 70's/80's), and somewhere along the way they changed the recipe. It was not the same! This was back before the internet, so you couldn't just search online for it. But luckily, I had written the recipe down because I made it so much. I kept all my favorite recipes together and in my late teens/early 20's I compiled them into a family recipe book so all of our favorite go-to recipes would be easy to find in one place. I think you can get the original recipe by doing an internet search now, but for ease, I put it below.
A couple things to mention, the original recipe called for Parkay margarine. I'm not even going to include margarine in the recipe below. That was back in the day when margarine was considered a healthier alternative for butter. Do not use margarine. It has a higher water content and will affect how your fudge sets up. Any time you see margarine or butter or margarine on a recipe, consider it a mistake...they misspelled BUTTER! Do yourself a favor and only use butter! ????
Also, a good candy thermometer is a must! The recipe says to cook until it reaches 234 degrees or 5 minutes. Ignore the 5 minute suggestion and use a thermometer. You can go up to 238 but in all honesty, but you are risking over-cooking it, so stay as close to the 234 as you can. If your thermometer is off by a degree or two you will still be in that safe zone. Another important thing to remember is to constantly stir while cooking to prevent scorching.
Original Fantasy Fudge (from the Kraft Marshmallow Creme jar)
3 C (686g) sugar
3/4 C (1 1/2 sticks) (170g) BUTTER (not margarine as on the original recipe)
2/3 C (5 ounce) (147ml) evaporated milk
1 12-oz (340g) bag of semi-sweet chocolate pieces
1 7-oz (198g) jar Kraft Marshmallow Creme (now called Jet Puffed)
1 C (106g) chopped nuts, optional
1 tsp. vanilla
Lightly butter a 9x13 baking pan. Combine sugar, butter, evaporated milk in a heavy 3 qt saucepan, bring to a rolling boil, stirring constantly. Boil over medium heat until candy thermometer reaches 234 (about 5 minutes, but use the thermometer as your guide, NOT the time). Stir constantly to prevent scorching. Remove from heat, stir in chocolate pieces until melted. Add marshmallow creme, nuts, and vanilla. Stir until well blended. Pour into buttered pan. Cool and cut into squares.
