Recipe In English:
Ingredients:
• Green Chilies 2-3
• Coriander Leaves 2 Tbs
• Green Onion Whites 2 Tbs
• Chicken Boneless ½ Kg
• Meat Tenderizer ½ Tsp
• Ginger Garlic Paste 1 Tbs
• Yogurt ¼ Cup
• Cream ¼ Cup
• Black Pepper ½ Tsp
• White Pepper ¼ Tsp
• Whole Spice Powder ½ Tsp
• Corn Flour 1 Tbs
• Salt ½ Tsp Or To Taste
• Lemon Juice 2 Tbs
• Makhan (Butter) Melted 1 Tbs
Directions:
In blender, make paste of green chilies, coriander leaves and green onion’s white.
In a bowl, add chicken and all ingredients except butter. Mix well and marinate for 2-3 hours
Add butter before cooking and mix well.
Bake at 180 degrees for 20-25 mins
BBQ or shallow fry in a pan until it’s done.
Delicious Malai Boti is ready.

Ajza:
• Hari Mirch 2-3
• Dhania 2 Tbs
• Hari pyaz ka safed hissa 2 Tbs
• Chicken Boneless ½ Kg
• Meat Tenderizer ½ Tsp
• Adrak Lehsan Paste 1 Tbs
• Dahi ¼ Cup
• Cream ¼ Cup
• Kali mirch powder ½ Tsp
• Safed mirch powder ¼ Tsp
• Garam Masala Powder ½ Tsp
• Corn Flour 1 Tbs
• Namak ½ Tsp Or To Taste
• Lemon Juice 2 Tbs
• Makhan Melted 1 Tbs
Banane ka tareeka:
Blender main hari mirch, dhania aur hari pyaz ka paste bana ke alaihda rakh lain.
Ek bowl main chicken aur baki ajza shamil karlain (siwae makhan ke) Hari mirch ka paste bhi shamil kar lain. Mix karke 2-3 ghante marinate hone keliye rakh den.
Banane se pehle makhan shamil karke mix karlain.
180 degrees pe 20-25 mins tak bake karain ya phir BBQ ya shallow fry karlain

Ginger garlic Paste - 1 tsp
White Pepper Powder - 1 tsp
Chat Masala - 1 tsp
Garam Masala Powder - 1/2 tsp
Fresh Cream - 3 tbsp
Whisked Yogurt - 1/4 cup
Corn flour - 2 tbsp
Dried Fenugreek Leaves - 1 tbsp
Salt - 1 tsp
Butter - 1 tbsp
Fresh Cream - 2 tbsp
Grated Cheese - 2 tbsp
Mayonnaise - 3 tbsp
Green Chutney - 2 tbsp
Butter - 1 tbsp

1 kg chicken
.50 gm almond
2 green chilli
2-3 tbsp oil
2 cube butter
1/2 tsp white pepper powder
salt to taste
1 spoon ginger garlic paste
3 tbsp curd
5 tsp cream/malai

Chicken Malai Tikka Recipe | Chef Sanjyot Keer
Written recipe for Chicken malai tikka
Prep time: 1.5 hours
Cooking time: 30 mins
Serves: 4
Ingredients:
• Chicken 500 gm
• Salt to taste
• Black pepper 1/4th tsp
• Garlic paste 1 tbsp
• Ginger paste ½ tbsp
• Hung curd 3/4th cup
• Fresh cream ½ cup
• Almond paste 2 tbsp
• Green chilli paste 1 tsp
• Garam masala 2 tsp
• Kasuri methi 1 tsp
• White pepper powder 1/4th tsp
• Salt to taste
• Fresh coriander leaves 1 tbsp (chopped)
• Corn starch 1 tbsp
• Live charcoal + oil
• Bamboo skewers as required
• Ghee 2 tbsp
Methods:
• Slice the chicken breast from between and further slice the chicken into thin slices, transfer it to a mixing bowl, add salt & pepper, ginger paste and garlic paste, mix and marinate the chicken for 15 minutes.
• In a separate bowl, add hung curd, fresh cream, almond paste, green chilli paste, garam masala, kasuri methi, white pepper powder, salt and fresh coriander, mix well, add corn starch and add the marinated chicken, mix and coat the second marination properly, marinate the chicken for at least 1 hour.
• Place a bowl in the centre and Place a live charcoal in it and add few drops of oil, cover and smoke for 3-4 minutes. Discard the coal.
• Skew the marinated chicken in the bamboo skewers.
• Heat a pan on medium heat, add ghee and grill the chicken from all the sides for 3-4 minutes.
• Your chicken malai tikka is ready to be served, sprinkle some chaat masala and squeeze some fresh lemon to elevate the taste, serve hot.

Ingredients:
1 kg Chicken
1 tsp Ginger paste
1 tsp Garlic paste
3/4 cup Yogurt
Salt
2 tbsp Oil
1 Bunch Fenugreek leaves, chopped
1 tbsp Oil
1 tbsp Ghee
Onions, chopped
1/4 cup Cashew nuts+5-6 Green Chillies+2 Garlic pods+ 1/2 inch Ginger
1 cup Water
Salt
1/2 cup Milk
1/4 cup Fresh Cream, beaten
Method of preparation:
In a bowl, add chicken, ginger paste, garlic paste, yogurt, salt, mix well and keep it aside.
Heat oil in a pan, add fenugreek leaves and fry them until they are nice and crisp.
Heat a vessel, add oil, ghee, onions and saute them until they are nice and soft.
Add cashew paste and saute them until the oil separates.
Add the marinated chicken and saute it on a high flame for 4-5 minutes.
Add water, salt, cover it with a lid and cook on medium flame till it's completely done.
Add the fried fenugreek, mix it well, increase the flame and boil the curry for 3-4 minutes.
Reduce the flame and add milk, stir it again.
Add fresh cream, mix it and let it cook for a minute.
Our Murgh Methi Malai is ready to serve.
