Ingredients for White Chicken Curry:
- Chicken, large pieces with bones- 1 Kg
For Marination:
- Salt- 2 tsp
- White Pepper Powder- 2 tsp
Whole Spices:
- Green Cardamom- 8
- Black Cardamom- 2
- Cloves- 8
- Cinnamon- 3 small pieces
- Black Peppercorns- 20
- Mace (Javitri)- 1 flower
Cashew-Almond Paste-
- Cashews- 12
- Almonds, soaked and peeled- 12
Other Ingredients:
- Onions, grated- 2 medium (150 gms)
- Ginger garlic paste- 3 tsp
- Whisked Curd/Yogurt- 5 tbsp
- Green Chillies, slit- 6-7
- Fresh Cream- 4 tbsp
- Refined Oil- 6 tbsp
- Kasuri Methi (Fenugreek leaves)- 1 tbsp
- Butter- 1 tbsp
Preparation:
- Soak the almonds in warm water for 30-60 mins. Remove and peel the skin.
- Marinate the chicken pieces with salt and white pepper powder. Mix and set aside for 30 mins.
- Grate the onions and slit the green chillies.
- To make the almond-cashew paste, add both in a grinder and coarse grind to a powder.
- Now add 4-5 tbsp water and blend it into a smooth paste.
Process:
- Heat oil in a pan and add the whole spices.
- Once it splutters, give a stir and add the grated onion. Give a mix and fry on medium heat for 3 mins making sure the color doesn’t change.
- Now add the ginger garlic paste and fry on medium heat for 2 mins.
- Add the marinated chicken and mix & sear on high heat for 4 mins. Continue to cook on medium heat for 3 mins till the chicken pieces are light brown.
- Lower the heat and add the whisked curd/yogurt and slit green chillies & cook on low heat for 2-3 mins (stirring continuously) till oil separates.
- Now cover and cook on low heat for 15 mins till the chicken is nearly tender.
- Remove the lid, add the cashew-almond paste and fresh cream and give a mix.
- Also add 150 ml water and a pinch of salt, give a mix and cover & cook on low heat for 10 mins till the chicken is tender and oil separates.
- Add the roasted fenugreek leaves (Kasuri Methi). Also add a tbsp of butter. Cook for 2 mins and rest it for around 20 mins before serving.

Murgh Malai
Ingredients
Butter - 2 Tbsp
Onion - 2 nos thinly sliced
Green chili - 2 nos slit
Ginger garlic paste - 1 & 1/2 tsp
Chicken - 1 kg
Salt to taste
Yogurt/Curd - 1 cup
Garam Masala powder - 1 tsp
Cumin powder - 1 & 1/2 tsp
Coriander powder - 1 tsp
White Pepper powder - 2 tsp
Water
Fresh Cream - 250 ml
Kasuri Methi
Few Coriander leaves
Method :
1. Take a wide pan add (Buy ). butter, onion, green chilly and saute well.
2. Once the onion is transparent add ginger garlic paste and chicken. Mix it well.
3. Add salt and fresh yogurt/curd. Close the lid and let it cook for 15 minutes in low flame.
4. Once the chicken is half cooked, add garam masala powder, cumin powder, coriander powder, white pepper powder and add water. Close and cook for another 15 minutes.
5. Then add fresh cream and kasuri methi, mix it gently.
6. Finally add coriander leaves. Close the lid (Buy and let it cook for 10 minutes in low flame.
7. Check for seasoning and turn off the stove.
8. Serve it with chapati, naan, roti or rice.

-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Kacha papita (Raw papaya) paste 1 tbs
-Dahi (Yogurt) whisked 3 tbs
-Olper’s Cream ½ Cup (room temperature)
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder ½ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Lemon juice ½ tbs
-Cooking oil 2-3 tbs
-Koyla (Charcoal) for smoke
Directions:
-Make a deep cut in the center of chicken drumsticks vertically & open it like a butterfly.
-In a bowl,add drumsticks,salt,ginger garlic paste,raw papaya paste & mix well,cover & marinate for 30 minutes.
-Add yogurt,cream,red chilli powder,cumin powder,black pepper powder,turmeric powder,garam masala powder,Kashmiri red chilli powder,lemon juice & mix well,cover & marinate for 1 hour.
-On griddle,add cooking oil,marinated chicken,cover & cook on medium flame for 5-6 minutes then cook on high flame until chicken is tender & dries up (turn sides & apply remaining marinade in between).
-Give coal smoke for 2 minutes & serve!

-Dahi,cream,lal mirch powder,zeera powder,kali mirch powder,haldi powder,garam masala powder, Kashmiri lal mirch powder aur lemon juice dal ker ache tarhan mix karein aur dhak ker 1 hour kluya marinate ker lein.
-Tawa per cooking oil aur marinated chicken dal ker dhak dein aur darmiyani ancch per 5-6 minutes kliya paka lein phir tez ancch per chicken gul & sukh janay tak paka lein (turn sides & apply remaining marinade in between).
-2 minutes kliya koyla ka dhuwan dein & serve karein!

This recipe is a lip smacking and mouth-watering one as when you take a bite into that tender and juicy chicken cooked in cream and delicately flavoured with whole spices, it will definitely take you to a divine food journey!
MALAI CHICKEN
Ingredients
2 tbsps fresh cream (malai) + for garnish
750 grams chicken leg bonless, cut into 2 inch pieces
1½ tbsps ginger-garlic paste
1 tbsp green chilli paste
Salt to taste
6-7 small onions, boiled
2 tbsps cashew nut paste
¼ cup yogurt
1½ tbsps ghee
½ tsp Tata Sampann Kasuri Methi + for garnish
¼ tsp green cardamom powder
¼ tsp white pepper powder
Slit green chillies for garnish
Laccha parantha to serve
Method
1. Take chicken in a large bowl, add 1 tbsp ginger-garlic paste, ½ tbsp green chilli paste, salt and mix and set aside for 5-10 minutes.
2. Meanwhile, put onion in a blender jar and blend well, add remaining green chilli paste, remaining ginger-garlic paste, cashew nut paste, yogurt and blend to a fine paste.
3. Heat ghee in a non-stick pan, add the chicken and sauté on high heat for 3-4 minutes. Cover and cook for 6-8 minutes or till the chicken is half cooked.
4. Add the blended paste, mix and cover and cook on low heat for 20-25 minutes.
5. Add Tata Sampann Kasuri Methi, adjust salt, add green cardamom powder and white pepper powder and mix well. Cook for 2-3 minutes.

-Kacha papita (Raw papaya) paste 2 tbs or Meat tenderizer 1 tbs
-Dahi (Yogurt) 2 tbs
-Lemon juice 2 tbs
-Kashkhash (Poppy seeds) soaked 1 tbs
-Kaju (Cashew nuts) soaked 10-12
-Pani (Water) 1-2 tbs
-Sufi cooking oil 1-2 tbs

-Hari mirch (Green chili) crushed 1 tbs

-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Namak (Salt) ½ tsp or to taste
-Dahi (Yogurt) whisked ¾ Cup
-Doodh (Milk) ½ Cup as required
-Cream 2 tbs
-Kasoori methi (Dried fenugreek leaves) ½ tsp
Directions:
-Cut chicken fillets into cubes.
-In bowl,add chicken boneless cubes,white pepper powder,ginger garlic paste,cream,cumin seeds,salt green chilies,raw papaya paste,yogurt,lemon juice,mix well and marinate for 2 hours.
-In blender,add cashew nuts,poppy seeds,water and blend well & set aside.
-In grill pan,add sufi cooking oil and marinated chicken,grill until done & set aside.
-In the same grill pan,add sufi cooking oil,capsicum,onion and grill for 1 minute & set aside.
-Give a charcoal smoke for 2 minutes & set aside.
-In wok,add sufi cooking oil,butter and let it melt.
-Add cloves,green cardamom and mix.
-Add grinded onion,mix well and cook for 4-5 minutes.
-Add ginger,green chilies,cashew+poppy seeds paste,mix well and cook for 2-3 minutes.
-Add white pepper powder,black pepper powder,cumin seeds,salt and mix well.
-Add yogurt and mix well for 2-3 minutes.
-Add milk and mix well.
-Add cream and mix well.
-Now add grilled chicken & vegetables and mix well.
-Add dried fenugreek leaves,cover and let it simmer for 2 minutes.
-Add butter & serve!
