Chicken Malai Curry | Creamy Chicken Curry | Chicken Malai Masala | | Malai Chicken Recipe | Creamy Chicken Gravy | White Chicken Curry
Ingredients for Malai Chicken:
- Chicken, curry cut with bones – 500 gms
- Fried Onions - 2 medium onions
For the marinade :
- Turmeric powder – 1/4 tsp
- Coriander powder – 3 tsp
- Garam Masala powder – 1 tsp (Link to our Garam Masala Recipe:
- Curd – 125 gm
- Ginger-garlic paste – 2 tsp
- Cashew paste – 8-10 cashews
- Salt- 1 tsp
- Green chilies, slit – 3-4
- Cream- 2 tbsp
- Refined oil- 3 tbsp & oil for frying the sliced onions
Preparation :
- Wash the chicken & put in all the items for the marinade. Mix well. Set aside for around an hour.
- Fry the sliced onions until golden in colour. Remove from oil & once it’s cooled, crush it with your hand.
Process :
- Take a kadhai & heat oil .
- Once the oil is hot, add the marinated chicken & cook on medium heat for 6-7 mins till most of water dries up.
- Now add the crushed fried onions, mix it well and continue to fry it on medium heat for 5-6 mins till oil separates.
- Add 250 ml of water and continue to cook covered on low heat for 15 mins till chicken is tender.
- Add the cream, mix & simmer for 2-3 mins.
- Add the finely chopped coriander leaves, mix well & simmer for a minute.

Ingredients for Chicken Malai Handi:
(Tsp - teaspoon; Tbsp - tablespoon)
- Boneless Chicken thighs - 500 gms (cut into 2” pieces)
For Marination:
- Salt- 1 tsp
- White Pepper Powder- 1 tsp
Onion-Cashew Paste:
- Onion, sliced- 2 medium (130 gms)
- Cashew nuts- 12 nos
- Green Chillies, cut- 3
Whole Spices:
- Green Cardamom- 5
- Cloves-5
- Black Peppercorns- 12
Spice Powders:
- White Pepper Powder- 1/2 tsp
- Coriander Powder- 1 tsp
- Cumin Powder- 1 tsp
- Garam Masala Powder- 3/4 tsp
- Nutmeg Powder (Jaiphal)- 1/4 tsp
Other Ingredients :
- Ginger Garlic paste- 2 tsp
- Whisked Curd/Yogurt- 3 tbsp curd whisked with 3 tbsp water
- Fresh Cream- 4 tbsp
- Oil- 3 tbsp
- Butter (optional)- 1 tbsp
- Kasuri Methi (Dry Fenugreek Leaves), roasted & powdered- 2 tsp
Preparation:
- Clean and cut the boneless thighs into 2” pieces.
- Grind the white peppercorns or use readymade white pepper powder.
- Grate the Nutmeg (Jaiphal) into a powder.
- Marinate the chicken pieces with salt & white pepper powder. Mix and set aside for 30 mins.
- For the Onion/Cashew Paste, slice 2 medium onions (130 gms), cut 3 green chillies (Serrano Peppers) into halves and take around 12 whole cashew nuts.
- Now heat 1.5 tbsp oil in a pan and add the sliced onions. Fry on medium heat for 3 mins till the onions are translucent and then add the cashews and the green chillies. Mix and fry for another 2 mins and then set it aside on a plate to cool.
- Once cooled, add these into a blender and first coarse grind. Add 3 tbsp water and blend it into a smooth paste.
- For the Yogurt mix, whisk 3 tbsp of Curd or Plain Yogurt and add 3 tbsp water. Whisk again & set aside for use later.
Process:
- Heat oil in a wok or kadai and add the whole spices.
- Once it splutters, reduce heat to low and add the ginger garlic paste. Give a mix and fry on low heat for around 2 mins.
- Now add the Onion-Cashew paste made earlier and fry on medium heat for 5 mins till the color starts changing.
- Add the marinated chicken pieces and mix & fry on high heat for 4-5 mins till the chicken pieces are light brown.
- Now add all the spice powders other than Kasuri Methi, give a mix and fry on medium heat for 3-4 mins.
- Lower the heat and add the yogurt-water mix. Cook on low heat for around 3 mins till oil separates.
- Add 100 ml water, give a mix and cover & cook on low heat for 15 mins till the chicken pieces are tender.
- Remove the lid and add the fresh cream. Give a mix and add another 50 ml water.
- Cover and cook on low heat for another 5 mins till oil separates.
- Remove the lid and add 1 tbsp butter (optional) and dry roasted & powdered Kasuri Methi (Fenugreek leaves).
- Mix and simmer on low heat for 2 mins.
- Serve with roti or naan.

-Cooking oil 3-4 tbs
-Chicken mix boti 1 kg
-Lal mirch (Red chilli) crushed 1 tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Safed mirch powder (White pepper powder) 1 tsp
-Garam masala powder ½ tsp
-Elaichi powder (Cardamom powder) ¼ tsp
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lemon juice 2 tbs
-Kasuri methi (Dried fenugreek leaves) 1 tbs
-Koyla (Charcoal) for smoke
-Hari mirch (Green chilli) sliced
-Kali mirch (Black pepper) crushed
Directions:
-In a blender jug,fried onion,garlic,ginger,green chillies,cashew nuts,fresh coriander,mint leaves, yogurt,cream,water,blend well & set aside.
-In a wok,add cooking oil,chicken & mix well until it changes color.
-Add red chilli crushed,black pepper crushed,white pepper powder,garam masala powder, cardamom powder,salt,cumin seeds & mix well.
-Add lemon juice,mix well & cook on medium flame for 2-3 minutes.
-Add blended paste & mix well,cover & cook on low flame until chicken is tender (18-20 minutes).
-Add dried fenugreek leaves,mix well & cook on high flame until oil separates.
-Turn off the flame & give coal smoke for 2 minutes.
-Garnish with green chilli,black pepper crushed & serve with naan!

-Lemon juice dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Blended paste dal ker ache tarhan mix karein aur dhak ker halki ancch per chicken gul janay tak paka lein (18-20 minutes).
-Kasuri methi dal ker ache tarhan mix karein aur tez ancch per oil alag ho janay tak paka lein.
-Chulha bund ker dein aur 2 minute kliya koyla ka dhuwan dein.

Chicken marination ke ajza:
Chicken haddi ke bagair (cubes me katta huwa) 1 kg
NESTLÉ MILKPAK Yogurt 2 khanay ke chamach
Adrak lehsan ka paste 1 khanay ka chamach

Namak 1/2 chaye ka chamach
Malai handi bananay ke ajza:

Dhaniya powder 1 khanay ka chamach

Tarkeeb:
1. Chicken marination bananay ke liye aik bowl me chicken, nestle milk pack dahi, adrak lehsan ka paste, safaid mirch powder, or namak daal kar achi tarhan mix karen or chicken ko 15–20-minute ke liye marinate karen.
2. Malai handi bananay ke liye is me khanay ka tail daal kar garm karen or is me pyaaz daal kar 1-2 mins tak pakayen. Ab is me adrak lehsan ka paste daal kar chand seconds ke liye pakayen.
3. Phir is me marinate kiya huwa chicken rung tabdeel honay tak pakaye. Ab is me dhaniya powder, zeera powder, hari mirchen, safaid mirch powder or namak daal kar achi tarhan mix karen.
4. Agar zaruri ho to 1/4 cup pani daalen. Ab is me nestle milk pack dahi daal kar dhak kar 7- 10mins ke liye pakayen.
5. Ab dhakan utaar kar nestle dairy cream dalen or 2 -3 mins pakayen. Phir ismay pani daal kara chi tarhan paknay tak pakayen.
6. Ab issay serving bowl me daal kar upar se nestle dairy cream se garnish kar ke serve karen. Chicken malai handi tayar hai.

Hot water 1/4 cup + 1/4 cup
NESTLÉ MILKPAK Dairy Cream 1 pack
Directions for Chicken Marination:
1. In a bowl add chicken, NESTLÉ MILKPAK yogurt, ginger garlic paste, white pepper powder, salt and mix it well. Marinate the chicken for 15-20 mins.
Directions for Malai Handi Preparation:
2. In a pan heat oil and add onion. Cook for 1-2 mins. Add ginger garlic paste and cook for a few seconds.
3. Add marinated chicken and cook until chicken changes color. Add coriander powder, cumin powder, green chilies, white pepper powder, salt and mix it well.
4. Add 1/4 cup of hot water if necessary, add NESTLÉ MILKPAK yogurt and cover and cook for 7-10 mins.
5. Take off the lid and add NESTLÉ MILKPAK Dairy cream. Cook for 2-3 mins. Add water and cook until the chicken is fully done.
6. Now transfer it to a serving bowl. Garnish NESTLÉ MILKPAK Dairy Cream and serve. Your Malai Handi is ready.
