This easy breakfast casserole makes for a delicious weekend breakfast, it’s ideal for meal prep, and it’s perfect for special occasions and holidays like Christmas morning, or Easter brunch. You can easily feed the entire family (and then some), but you may not have much in the way of leftovers as it always gets devoured! Trust me, it's the best!

Hi, it’s Aviva Goldfarb, and it’s the holiday season, so a lot of times, we are looking for something that we can make ahead to serve for a holiday breakfast, maybe even Christmas morning, that won’t take too much work the morning of so we can really enjoy the time with our family. So I’m going to show you a recipe for a make-ahead breakfast casserole recipe: it’s a cheesy spinach and egg bake.
This recipe is so easy you’re not going to believe it, but it turns out to be so pretty and delicious, and it’s healthy with lots of vegetables and eggs and protein, so I think it’s going to be a winner at your breakfast table, but you could even eat it as breakfast-for-dinner, which we like to do sometimes too. There’s no reason not to do it. And if you like it a little meatier, you can add some bacon or some sausage to it, too, or you could serve that on the side. So I’m going to show you what we do. We’re going to beat our eggs; we’re just going to add in our spinach, which I’m going to show you how I drain—I use frozen, chopped spinach to make it easier and cheaper, and I buy organic whenever possible—and then we can use cottage cheese, or you can use Greek yogurt if you don’t like cottage cheese; shredded pepper jack cheese, but if you don’t want it so spicy, you can definitely just use Monterey jack cheese instead pepper jack cheese.
We’re going to bake it all together, but you can refrigerate it overnight and bake it in the morning if you want it hot and fresh in the morning. Our cheesy spinach and egg casserole is ready, the whole house smells amazing, and my family is going to love it for breakfast this morning. They’re not even going to know it only took me ten minutes to throw it all together. Actually if they did know, they’d probably be happy for me. We like to enjoy this easy egg and spinach casserole for breakfast or brunch topped with our favorite salsa, which you might enjoy too. One thing I realized is that this is so perfect for Christmas morning because it has these beautiful green and red colors, just like Christmas colors, so one more reason to enjoy it for a holiday breakfast. Make Ahead Breakfast Casserole for the Holidays or Anyday
Make Ahead Breakfast Casserole
1 pound of sausage of your choice
1 ½ pounds sweet potato diced into half inch dice
8 slices of bacon or a pound
1 small onion
1 green pepper
¼ tsp garlic powder
¼ tsp paprika
¼ tsp salt
12 large eggs
1/3 cup milk
½ cup of mozzarella cheese (optional)
Preheat your oven to 400 degrees.
On a sheet tray lined with parchment paper lay out the bacon slices in a single layer. Peel and dice the sweet potatoes and place on a separate parchment lined sheet pan. Add a TBSP of oil to the sweet potatoes, the paprika and garlic powder as well as some S & P. Mix to coat. Place the trays into the oven. The bacon will probably cook about 20 minutes and the sweet potatoes about 30 – 35 minutes. Set a timer for the bacon so you don’t forget about it.
Meanwhile in a large frying pan fry the sausage until cooked through. While its cooking you can chop the onion and pepper. Once the sausage is cooked drain the fat down to 1 TBSP return to the stove and add the pepper and onion and cook about 5 minutes.
Check the bacon it should be cooked, reserve two pieces and cut the rest up and add it to the sausage. Spray a 9 X 13 inch pan with any non stick spray. Now you are ready for the eggs. Break the eggs into a large bowl and add the milk. Whisk until the eggs and milk are well mixed.
Now start to assemble the casserole. Into the casserole dish add the sausage and bacon, the peppers and onion, the sweet potatoes and finally pour the egg mixture over the top. May sure that you level everything off. Crumble up the last two pieces of bacon over the top and finish with a bit of cheese. Bake at 400 degrees for 30 to 35 minutes if you are cooking it right away. If you are cooking it the next day cover with foil and put in the fridge. The next day take it out an hour before you want to start cooking it so that it can warm up a bit. It may take 35 – 40 minutes to cook it because it will all be cold. Check it with a tooth pick to make sure that it is cooked all the way through.

Mix together sausage, cheddar cheese, an egg, milk and bread and chill overnight for an easy and delicious single serving Overnight Breakfast Casserole Recipe For One.

6 ounces ground pork sausage , cooked and drained of fat
1 large egg
¾ cup milk
⅛ teaspoon kosher salt
⅛ teaspoon coarsely ground black pepper
2 cups cubed French Bread
½ cup shredded Cheddar cheese , or Monterey Jack cheese
???? INSTRUCTIONS
1) In a medium-sized skillet, cook the sausage until no longer pink. Transfer to a paper towel lined plate and set aside.
2) In a small bowl, beat the egg. Whisk in the milk, salt and pepper.
3) Butter a 5-inch baking dish, or dish of a similar size. Line the dish with the bread, cutting and rearranging if necessary.
4) Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire dish. Cover and refrigerate overnight.
5) Heat oven to 350 degrees F (177 degrees C). Cook the casserole, covered with aluminum foil for 25 to 30 minutes or until egg mixture is set.
6) Remove from the oven and enjoy while hot.

Use your favorite cheese. I love using Cheddar cheese but Monterey Jack cheese is a great alternative. I also find it best to use a crusty bread, such as French, Italian, sourdough or even day-old croissants.

30 oz. Bag Frozen shredded Hashbrowns, thawed
1 medium Onion, diced
1 cup White Queso Dip
1 cup Sour Cream
1 can Cream of Chicken Soup
1 cup shredded Sharp Cheddar
Seasonings of your choice: I used salt, pepper, garlic, and onion powder. + Paprika and dash of cayenne.
Preheat oven to 350. In large bowl, combine all ingredients. Grease 9x13. Pour in hasbrown mixture. Bake 45 minutes - 1 hour.

BREAKFAST CASSEROLE RECIPE
(makes 4-6 slices)
Ingredients:
1/2 pound Italian sausage, or my Italian sausage mixture (250g)
1 tbsp olive oil
2 small zucchinis (250-300g)
3 eggs
1.5 cups ricotta cheese (400g)
1/2 cup milk (120ml)
1/3 cup ground oats or oat flour (35g)
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 cup grated parmesan cheese (20g)
NUTRITIONAL INFO (per large slice):
341 calories, fat 15.5g, carb 14.8g, protein 35.1g
Preparation:
In a frying pan over medium heat add olive oil and cook the Italian sausage mixture until it's browned. Spread in the casserole dish.
Thinly slice zucchinis in half-moons and spread over the meat.
In a large bowl whisk the eggs, add the ricotta cheese, milk, ground oats, baking soda, salt, onion powder, garlic powder and black pepper, and mix it well until the smooth batter is formed.
Pour the mixture over the veggies and meats, shake it up or move around with a fork to evenly distrubute the filling.
Sprinkle with grated parmesan on top.
Bake in a preheated oven at 350F (180C) for 35 minutes.
Let it cool for 20 minutes, then slice into 4 or 6 equal pieces.
Serve and enjoy!
