Pinoy Style Baked Macaroni with White Sauce Recipe

Ingredients:
1 lb. elbow macaroni
Meat Sauce Ingredients:
1 piece Knorr Beef Cube
½ lb. ground beef
½ lb. ground pork
½ cup red bell pepper chopped
½ cup green bell pepper chopped
1 piece onion
4 cloves garlic chopped
2 teaspoons sugar
Salt and ground black pepper to taste
3 tablespoons cooking oil
¾ cup water
White Sauce Ingredients:
¼ cup butter salted
2 cups milk
3 ½ tablespoons all-purpose flour
¾ cups cheddar cheese shredded
Instructions:
Prepare the macaroni by cooking according to package instructions. Drain the liquid and set the macaroni aside.
Make the meat sauce. Heat oil in a pan. Sauté onion and garlic. Once onion softens, sauté ground beef and ground pork until it browns. Add hotdog and bell peppers. Cook for 1 minute.
Add Knorr Beef cube. Stir and then pour tomato sauce and water. Cover the pot and boil for 20 to 25 minutes using low to medium heat. Note: add more water if needed. Season with sugar, salt, and ground black pepper. Set aside.
Make the white sauce by melting butter in a saucepan. Add all-purpose flour. Stir and cook for 1 minute. Gradually pour milk while stirring. Add half of the cheese. Stir and continue cooking until the sauce thickens.
Combine macaroni and meat sauce in a bowl. Add the remaining cheese. Toss.
Preheat oven to 350F. Transfer the macaroni with meat sauce in a baking pan. Pour white sauce on top and then spread evenly.
Bake for 15 to 20 minutes.
Serve. Share and enjoy!

I love a good Big Mac, but it seems I never get one. They are messy, lazily put together or missing most of the Special Sauce. And I hate driving just for a sandwich. I found a copycat recipe that tastes exactly like the Big Mac sauce the sandwich is famous for. It goes together in a flash, but needs to be refrigerated overnight. No more pathetic Big Macs for me.

Big Mac Special Sauce “Copycat”
½ cup, 124g, mayonnaise
2 tablespoons, 50g, French dressing
4 teaspoons, 39g, sweet pickle relish
1 tablespoon, 15g, white onion
1 teaspoon white sugar
1 teaspoon, 5ml, white distilled vinegar
pinch kosher salt
dash white pepper
Whisk all ingredients together, cover and refrigerate overnight. Makes 8 ounces.

IMPORTANT NOTES:
- Do not heat the sauce separately before adding to pasta, this can cause it to separate. For best results, strain the cooked pasta, let sit for 2-3 minutes (so it isn't extremely hot when adding to the sauce), then add the desired amount of sauce to the warm pasta.
- The sauce will thicken up in the fridge, but when you add to warm pasta it will melt and combine easily (similar to those sauces that come with Velveeta Shells and Cheese).
- IF the sauce separates when you add to the pasta, remove from heat and let it sit for ~5 minutes. Then, stir the pasta continually and the sauce will re-constitute. The separating issue typically is caused by excess heat but is resolved once it cools down a bit and is stirred.

450g 2% Cottage Cheese (one entire 16oz container)
80g 2% cheddar (or cheddar of choice)
20g Parmigianno Reggiano
30g Cheddar Powder (buy in bulk on Amazon or use packets found in boxed Mac n Cheese)
150g 1% milk
Salt/Pepper to taste
Per Serving* (makes 4)
210 Cals
25g Protein
9g Carbs
10g Fat
*A serving makes enough for 4oz of pasta. The entire recipe makes enough for 1 pound of pasta.
