Directions:
Heat oil in skillet on medium-high heat, add onions, pepper and saute until tender. Stir in rice and next 3 ingredients. Saute 3 minutes. Add beans and tomatoes, cook 3 more minutes.

INGREDIENTS:
3 fully ripe plantains
2 cups short grain brown rice (or rice of your choice)
1 cup soaked black beans (or can of cooked beans)
1 cup fresh tomatoes
SPICES:
Ground cumin
Dried red pepper flakes/Chili powder or Cayenne
Cinnamon
Optional fresh cilantro

Low Fat Vegan No Oil DIY Chipotle Rice Bowl
Ingredients for the Cilantro Lime rice:
2 cups cooked rice
1/2 C fresh lime juice
1/4 C water
1 small garlic
2 C fresh cilantro
Blend all ingredients together. Ta DA!
Ingredients for Chipotle corn:
1 bag frozen corn defrosted
1/2 C chopped red onion
1 C chopped cilantro
1 Jalapeno chopped super small
1/2 t sugar
2 limes squeezed on top.
You can add salt and pepper if you want, I keep mine super simple and do not add any S & P.
Ingredients for salsa:
3 C tomatoes chopped. I love using cherry tomatoes
1/2 C chopped red onion
1 C chopped cilantro
1 Jalapeno chopped super small
1/2 t sugar or 1 T agave
2 limes squeezed on top.
Ingredients for Black beans:
2 cans organic black beans no salt added.
Ingredients for guacamole
1 avocado
2 T salsa

- INSTANT POT RICE & BEANS -
Ingredients:
- 1 cup brown rice
- 1 cup black beans
- enough water to cover the rice and beans by about 3/4 of an inch
- 1/4 onion, sliced
- 2 cloves garlic, minced
- 2 tsp. cumin
- 1/2 tsp. chili powder
- 2 tbsp. nutritional yeast
- 1/2 - 1 tsp. sea salt
- 1/4 tsp. black pepper
- Optional add ins: your favorite salsa or hot sauce
Directions:
- Put the rice and beans into the Instant Pot and cover with at least a half inch of water.
- Add in the rest of the ingredients and stir well.
- Set your Instant Pot for 25 minutes on the manual setting (make sure the valve is turned to sealing and the pressure is on high).
- Once the 25 minutes is up, wait until the timer counts up to 10 minutes and use a towel to turn the valve from sealing to venting. Be careful - that shit is hot!
- Let the pressure release for another minute or so, open your Instant Pot, give the rice and beans a good stir, and boom - perfect rice and beans for all your burrito bowl needs. Enjoy!
NOTE: Cooking time may vary depending on your location, the age and size of your beans and rice, how they've been stored, etc. So keep that in mind! Play around with this recipe until it's just right for you! ❤️
