How To make Linguini with Paprika Sauce
1/2 c Olive oil
4 Garlic cloves, crushed
1/4 c Hungarian sweet paprika
1/2 c Dry white wine, or white
-vinegar 4 md Tomatoes, peeled and seeded
-or 3/4 c Well drained Italian plum
Tomatoes 1/2 ts Salt
1 lb Linguini
Heat 1/2 cup oil in heavy 10 inch skillet over low heat. Add garlic and cook until golden brown, about 10 minutes. Discard garlic using slotted spoon. Add paprika to skillet and stir 5 minutes. Add wine. Increase heat and boil until reduced by half. Finely chop tomatoes in processor or blender. Add to skillet. Stir in salt. Simmer until sauce thickens, about 10 minutes.
Cook linguini. Top with cheese if desired. From Bon Appetit October 1984.

This spicy, creamy, red bell pepper pasta sauce is a rare pasta sauce that I’ve only found in a jar in a supermarket in Italy, today I set out to recreate this nostalgic sauce. I believe this is a variation of pesto alla calabrese.

White sauce

2 cups (500ml) milk
½ teaspoon black pepper
salt to taste
2 cheese slice
To toss veggies
4-5 tomatoes

¾ cup (100 grams) almonds
2 tablespoons (28 grams) olive oil
1 teaspoon (5 grams) salt
1 clove garlic
½ teaspoon red pepper flakes
FOR THE PASTA
1 pound (450 grams) rigatoni pasta or other
1 handful parsley or basil
ROASTED VEGGIES (OPTIONAL)
1 large cauliflower or eggplant
