The Miracle of the Linguine with Clam Sauce
Today I had the opportunity to experiment with shirataki tofu noodles. These so-called “miracle noodles” contain almost no carbs or calories. What happens when one tries to use them to make a traditional Italian pasta dish like linguine with clam sauce? Will it be edible? Here’s the recipe for regular linguine pasta:
Linguini with Clam Sauce
2 6 1/2 oz. cans of minced clams
1/4 cup of olive oil
1/4 cup of butter
2 or 3 cloves of garlic, mashed or finely minced
2 to 3 tablespoons of chopped parsley
1/8 teaspoon of salt (or none at all since the clams contain salt)
One pound (dry weight) of linguine or fettuccine pasta
Parmesan cheese to taste
Separate the clams from the liquid, reserving 3/4 cup of the liquid.
Heat the butter and olive oil in a pan. Add the garlic and sauté it until golden. Remove the pan from the burner and add the clam liquid, the chopped parsley and put the pan back on the burner. Bring the mixture to a boil for 10 -15 minutes. Add the clams and simmer for 3 minutes more. Serve over linguini.
