INGREDIENTS (2 waffles)
Wet Ingredients:
1 egg
½ tsp (2g) vanilla extract
3 tbsp (38g) canola oil or any neutral oil
¾ cup (177g) drinking water
Dry Ingredients:
1 cup (169g) sweet rice flour (Mochiko)
¼ cup (35g) cornstarch (a little less for softer waffles)
2 tsp (7g) baking powder
2 Tbsp (27g) sugar
½ tsp (3g) salt

If you're the lucky owner of a waffle maker, or have been eying one up (you can pick up waffle irons cheaply online - it's an investment in your breakfast future!) this recipe is a great go-to; there's no proving, resting or waiting around, just mix, cook and eat! We've included pecans here but if you're not keen you can leave them out.

500ml Whole Milk
Squeeze of Lemon Juice
300g Plain Flour
20g Caster Sugar
3 tsp Baking Powder
3/4 tsp Salt
1/4 tsp Ground Cinnamon

DRY INGREDIENTS
300g Flour
1/2 tsp Baking Soda
1/2 tsp Salt
6g Yeast
10g Sugar
WET INGREDIENTS
30 ml Warm Milk
570ml Sour Milk (You can substitute this with 570ml Milk + 30 ml Vinegar)
115g Butter (Melted)
2 Large Eggs
Note:
*It is important to let your Batter rest for 1 hour for the flavour to develop an for the yeast to fully activate
*Pre-heat you waffle maker before pouring the batter

Homemade Waffles Recipe
Homemade waffles are the kind of comforting dish that everybody love and never get enough with. This is my favorite waffle recipe so far. The batter is easy to work with and the waffles come out light, crispy and fluffy.

Ingredients
Makes about 10 waffles
2 cups (250g) all-purpose flour
2 tsp (8g) baking powder
1/2 tsp (3g) salt
3 tbsp (45g) sugar
1 tsp (5g) vanilla extract
2 cups (480ml) milk
2 eggs, separated
3 tbsp (45g) butter - melted
1.In a large bowl whisk together the dry ingredients: flour, baking powder and salt.
2. Separate the eggs. Mix the egg yolks with sugar, butter, vanilla and 1 cup milk. Add flour mixture and mix until well combined. Gradually add the other cup of milk and whisk to combine.
3. Whip the egg whites and gently fold them into the yolks mixture.
4. Preheat your waffle iron and spray both surfaces with cooking spray or grease with oil. Pour about 1/3 cup batter onto one side of the iron and close it.
5. Bake until the iron's indicator light shows that cooking is done and the waffles are golden brown and crisp. It's best to serve them immediately with butter, maple syrup or honey and fruits.
