LENTIL PIE RECIPE | How to Make Lentil Peas Pie | Easy Lentil Recipe

Lentil pie ingredients
2 cups or 1 lb lentil soak over night in 5 cups water. (soaking is optional).
4 tbsp Vegetables oil.
1 cup finely chopped onions.
1 cup finely chopped apples.
1 & 1/2 tbsp salt.
2 beaten eggs.
3 tbsp minced garlic.
2 cups coarsely grated carrots.
1 cup tomatoes finely dice.
1/2 cup pimento finely chopped.
1/2 cup Sweet peppers finely dice.
1 tbsp hot pepper (optional).
1/2 cup green seasoning chive, celery and thyme.
2 cups breadcrumbs.
How to make lentil pie at home
Add 1 tbsp salt. cook lentils until soft and water is absorbed.
Heat oil in pot frying onions, garlic, carrots, tomatoes, sweet peppers, pimento peppers, apples, hot pepper(optional) until tender.
Add green seasoning 1/2 tbsp salt turning until mixture incorporates.
Add into a mixing bowl lentils, fried mixture,beaten eggs & breadcrumbs.
Mix until mixture is well blended (adjust salt and pepper).
Place in a greased baking dish 12× 18× 3 and bake at 325 degrees F or 160 degrees C for 1 hour or until firm.
Note :Lentils can be substituted with pigeon peas.

Lentil cottage pie recipe
You won’t find meat in this cottage pie, but you will find plenty of flavour from all the fresh veggies and lentils – not to mention the crisp potato topping! Using canned brown lentils makes this dish super affordable, as well as a nutrition powerhouse. Lentils are high in dietary fibre, iron and B group vitamins, and are an excellent substitute for mince.
By swapping the classic potato mash topping for a crisp potato top, we’ve also cut down on cooking time, so rumbling tummies will be satisfied faster.

LENTIL SHEPHERD'S PIE RECIPE
(Makes 8 servings)
Ingredients:
For the lentil filling:
1 large onion, chopped
3 medium carrots, chopped
8 oz button mushrooms, thinly sliced
3 cloves garlic, minced
3 tbsp tomato paste
1/2 cup red wine
2 cups vegetable broth
2 cups cooked lentils, or canned lentils
1 cup frozen peas
2 bay leaves
1 sprig rosemary
1 tsp dried thyme
2 tbsp soy sauce
2 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
3 tbsp olive oil
For the garlic mashed potatoes:
2 pounds potatoes, peeled and cubed
1 tsp salt
2 tbsp butter
4 cloves garlic, minced
1.5 cups Greek yogurt
1/2 tsp black pepper
NUTRITIONAL INFO (per serving):
405 calories, fat 8.3g, carb 59.2g, protein 22.3g
Preparation:
In a large pan, heat the olive oil on a medium-high heat. Add the onions and carrots, and cook for 5-6 minutes until soften.
Add the mushrooms, bay leaves, rosemary and dried thyme, and cook for another 5 minutes, until the mushrooms are tender.
Stir in the tomato paste and garlic, and cook for 2 more minutes.
Deglaze the pan with red wine, scraping the bits at the bottom.
Add vegetable broth, cooked lentils, frozen peas, and season with salt and black pepper.
Add Worcestershire sauce and soy sauce, and stir to combine.
Bring to a boil, lower the heat, and simmer for 5 minutes, until nice and thick.
For the garlic mashed potatoes, cook potatoes until fork tender.
Mash the warm potatoes with potato ricer or masher.
In a small saucepan, on low heat, melt the butter, add the garlic and cook for couple of minutes continuously stirring.
Add the butter garlic and Greek yogurt into the potatoes. Season with salt and black pepper, and mix with the spatula until smooth.
Transfer the lentil mixture into a casserole pan.
Top with the mashed potatoes and spread evenly.
Bake in the oven for 25 minutes at 400 degrees.
