Ingredients
Filling:
1/2 tbsp vegetable oil
1 onion diced
2 cloves of garlic minced
2 medium carrots diced
1 stalk of celery diced
1 tsp onion powder
1 tsp dried thyme (or 2 tsp fresh)
1/2 tsp dried rosemary (or tarragon)
1/2 tsp sugar (or maple syrup)
Salt & pepper to taste
2 tbsp tomato paste
2 tbsp soy sauce or coconut aminos
1 tbsp balsamic vinegar
1/4 cup (60 ml) vegetable stock
1/4 cup (60 ml) red wine OR more veggie stock
2 cups (400 g) cooked lentils (cooked from dry or use canned)
1/2 cup peas (frozen or canned)
1/2 cup corn fresh, frozen or canned
Mashed Potatoes:
2 pounds of (1 kg) potatoes
1/4 cup (60 ml) plant-based milk
2 tbsp vegan butter OR vegetable oil (or use plant-based milk if oil-free)
nutmeg, salt, and black pepper to taste

Spicy Lentil Pie bake for 30 mins or till golden brown 200c
400g ready cooked green lentils
400g chopped tomatoes
1 med red onion
2 small carrots
1 celery stick
2 bay leaves
3 cloves garlic
pinch rosemary
1/4 tsp cayenne pepper
1/4 tsp chili flakes
2 tbps balsamic vinegar
1 1/2 tsp smoked paprika
salt pepper to taste
100ml vegetable stock
3 fl oz wine
Topping
800g potatoes
butter
milk
2 handful frozen peas
salt and pepper season to taste

This is our easy Lentil Shepherd's Pie. It's a perfectly warming dinner recipe and works great for lunch the next day. Pair this with a side of greens and you've got yourself a winner!
It's cheap to make and it's super filling ????You can make this in advance and it will sit nicely in your fridge for a couple days until you're ready to eat!

Lentil pie ingredients
2 cups or 1 lb lentil soak over night in 5 cups water. (soaking is optional).
4 tbsp Vegetables oil.
1 cup finely chopped onions.
1 cup finely chopped apples.
1 & 1/2 tbsp salt.
2 beaten eggs.
3 tbsp minced garlic.
2 cups coarsely grated carrots.
1 cup tomatoes finely dice.
1/2 cup pimento finely chopped.
1/2 cup Sweet peppers finely dice.
1 tbsp hot pepper (optional).
1/2 cup green seasoning chive, celery and thyme.
2 cups breadcrumbs.
How to make lentil pie at home
Add 1 tbsp salt. cook lentils until soft and water is absorbed.
Heat oil in pot frying onions, garlic, carrots, tomatoes, sweet peppers, pimento peppers, apples, hot pepper(optional) until tender.
Add green seasoning 1/2 tbsp salt turning until mixture incorporates.
Add into a mixing bowl lentils, fried mixture,beaten eggs & breadcrumbs.
Mix until mixture is well blended (adjust salt and pepper).
Place in a greased baking dish 12× 18× 3 and bake at 325 degrees F or 160 degrees C for 1 hour or until firm.
Note :Lentils can be substituted with pigeon peas.
