How To make Lentil/Macaroni Bake
28 ounces tomatoes, canned
undrained, diced
1/2 cup onion :
chopped
2 cloves garlic finely minced
15 ounces tomato sauce
1/4 teaspoon black pepper
1 cup lentils
1 tablespoon parsley flakes
1/2 teaspoon basil leaves
4 ounces mushrooms :
sliced
2 1/2 cups water
1 cup macaroni
1/2 cup green peppers chopped
1 cup water
1/2 cup celery :
chopped
Combine all ingredients in Dutch oven, except for macaroni and 1 c. water. Bake, covered at 325 F. for 2 hours. Add macaroni and 1 c. water.
Stir together and bake another 30-45 minutes.

Tomato sauce 100 g

This recipe uses Red Lentil Fusilli Pasta which can be substituted for any type of pasta. Also, i used Goats Cheese for this recipe but you may wish to substitute with any cheese of your choice. The vegetables also can be chosen according to your own taste.

In a pan, heat some coconut oil and add crushed garlic and ginger. Cook until golden in colour and then add all the other ingredients: Himalayan pink salt, pepper, chilli flakes, dried mixed herbs, diced tomato and some cayenne pepper. Cook on medium/high heat for few minutes before adding the diced aubergine to it. Leave on simmer with the lid on until aubergine becomes tender (approx 7-8mins). Then add the diced red pepper and sweetcorn to the pan. Cook on low heat without the lid for few minutes. Meanwhile in a separate pan bring the red lentil pasta to a boil and cook according to the packet instructions. When the red lentil pasta is cooked, use a colander to strain the excess water, then add it to the spicy vegetable mix. Transfer the spicy vegetable pasta to an ovenproof dish and top with grated goats cheese. Bake in the oven on a medium:high setting until cheese has melted through (approx 8-10mins). Serve the Spicy Red Lentil Vegetable Pasta Bake with Salad. Enjoy!

RECIPE:
250 g lentils (1 cup+ 1/4 cup)
300 g pasta (10.5 oz)
2 celery stalks
1 carrot
1 potato
1 onion
120 g tomato purée (1/2 cup)
2 tsp + 1/4 tsp salt (adjust to taste)
black pepper
bay leaves
1.25 liters water (5 cups + 1/4 cup)
parmesan
2-3 tbsp olive oil
