How To make Curried Tuna Salad In Red Pepper
1 lg Red bell pepper
3 1/4 oz Chunk light tuna
- packed in water or oil, - drained & slightly mashed 1/2 c Canned garbanzo beans
- drained 1 2-in piece of cucumber
- preferably English - hot-house peeled, - and cut into fine dice 3 tb Dried currants
2 tb Slivered almonds
- lightly toasted 2 Scallions; thinly sliced
4 tb Plain low-fat yogurt
1 ts Curry powder
1/2 ts Ground ginger
CUT OFF THE TOP of the red pepper about one-third of the way down. Remove the seeds and membranes from both the top and bottom, and the stem from the top. Finely dice the top and put it in a medium-size bowl. Add the tuna, garbanzo beans, cucumber, currants, almonds and scallions to the bowl, and toss gently. Combine the yogurt with the curry and ginger, and mix it with the tuna salad. Spoon the tuna back into the red pepper before serving.

Curried Chickpea Salad

Ok you’ve heard of tuna salad but what about it’s (BETTER) vegan alternative?!?! This curried chickpea salad takes SECONDS to whip up & stores well in the fridge - so it’s the perfect lunch to meal prep ???????? you’re going to LOVE the spices in this one ????????????
INGREDIENTS:
• 1 can chickpeas (540mL)
• 1/2 red pepper (chopped into small cubes)
• 3 green onions (sliced)
• 1/4 cup vegan mayo (I use avocado mayo)
• juice from 1/2 a lemon
• spices: 1/2 tsp ginger & turmeric, 1/4 tsp curry powder
Drain & rinse chickpeas. Lightly mash em with a fork (you still want a few whole chickpeas in there). Add remaining ingredients & stir together.
DONE & ENJOY!!!

Tuna pasta is such a great dinner to make when you don't have much in the cupboard. For canned tuna recipe cynics out there - it's time to take a leap of faith! This is seriously tasty, very economical and super fast - it comes together in 15 minutes flat, from start to finish.
PRINT RECIPE:
The most amazing canned tuna pasta
200g / 7oz spaghetti, or other thin long pasta
1 tbsp cooking salt, for cooking pasta
TUNA SAUCE:
285g/ 10 oz (approx) canned tuna in oil*, drained, oil reserved (pasta can take more or less, I use 3 x 95g/3.5oz cans)
2 clove garlic, finely minced
2 anchovy fillets*, minced (sub 1 tsp paste)
1/2 tsp chilli flakes/red pepper flakes (can skip)
2 tsp baby capers (or finely chopped pickles)
1 tbsp parsley, finely chopped (ok to skip)
1 tsp lemon zest
2 tbsp lemon juice (sub 1 tbsp apple cider or sherry vinegar)
1/4 tsp cooking/kosher salt
1/4 tsp black pepper
1. Cook pasta in 3L/3 qts boiling water with the 1 tbsp salt. Just before draining, scoop out ~1 cup pasta cooking water, then drain the pasta.
2. In the same pot, heat the reserved oil from the tuna cans over medium heat. Cook garlic, anchovies and chilli flakes for 1 min. Add pasta, capers and 1/3 cup of reserved pasta water*. Toss using 2 spatulas for 2 min. Add tuna, parsley, lemon zest, juice, salt and pepper. Toss gently to mix through – try to keep some tuna chunks. Serve immediately!
Notes
* Not all tuna is created equal. The more you pay, the better. Not end of world if you skip anchovies AS LONG as you’re using the oil from tuna cans. If pasta cools down and is no longer hot and slippery with sauce, add splash of extra reserved pasta water then toss on stove until it reheats and becomes slick with sauce again.

1 can Chunk Light Tuna in Oil
1 Romaine Lettuce Head
1 bag Spinach (Preferably Baby Spinach)
1 box Cherry Tomatoes
2 Bell Peppers
1/2 Red Onion
3 Lemons
Salt and Pepper
Instructions:
1. Chop up Romaine Lettuce and Spinach
2. Slice up 2 colorful Bell Peppers (Make sure to seed the Peppers)
3. Slice up Red Onions and Pull apart
4.Mix Romaine Lettuce, Spinach, Bell Peppers, Cherry Tomatoes and Red Onion in Bowl
5. Add Full can of Tuna with Oil over mixture
6. Squeeze 3 lemons over salad
7. Add 2 Teaspoons Salt and Pepper
8. Mix and Serve
