How To make Lemon Loaf Cake
1 1/2 c All-purpose flour
1 1/4 ts Baking powder
3/4 ts Ground ginger
1/4 ts Salt
1 c Granulated sugar
Rind (colored part only) of -2 lemons 6 oz Unsalted butter, softened
3 oz Cream cheese, softened
2 lg Eggs
8 oz Lemon yogurt
GLAZE:
1/2 c Confectioner's sugar
5 ts Fresh lemon juice
1. Heat oven to 325 degrees. Grease an 8 1/2-by 4 1/2-inch loaf pan
and dust lightly with flour. Sift together flour, baking powder, ginger and salt; set aside. 2. Sprinkle several tablespoons of granulated sugar on a cutting
board. Add lemon rind and chop as fine as possible. Transfer to a large mixer bowl and add remaining granulated sugar, butter and cream cheese. Beat on high speed until light and fluffy, 3 minutes. Add eggs, one at a time, mixing well after each addition. Add yogurt and mix well. Stop the mixer and add dry ingredients. Mix just until combined. 3. Transfer batter to prepared pan. Bake until a toothpick inserted
in the center comes out clean, 60 to 70 minutes. Cool in pan for 5 minutes then invert onto a wire rack. 4. Make glaze by mixing confectioner's sugar and enough lemon juice

상큼한 레몬향이 솔솔 나는 폭신한 파운드 케이크를 만들었어요~
기본 파운드 케이크보다 버터를 많이 줄이고 사워크림을 넣어 구웠는데 훨씬 풍미도 좋고 가벼운 느낌이라 좋더라구요~
레몬 제스트를 넣어 레몬 향이 많이 나서 상큼하게 먹을 수 있는 파운드 케이크 랍니다~^^
반죽을 틀에 붓고 가운데 버터를 얇게 한줄 짜서 구우면 자연스럽게 크랙이 생겨 중간에 오븐을 열어 칼집을 넣지 않아도 되서 좋더라구요~
파운드 케이크는 바로 먹는 것 보다 하루 이상 숙성해서 먹으면 훨씬 더 깊은 풍미를 느낄 수 있답니다~

▶틀 사이즈 Mold size : 23cm x 12.5cm x 7cm
▶재료
달걀 140g
설탕 130g
바닐라익스트랙 3g
무염버터 50g
사워크림 80g
레몬제스트 1개 분량
중력분 130g
베이킹파우더 4g
레몬즙 20g
슈가파우더 90g
▶레시피
1. 달걀을 풀고 설탕, 바닐라익스트랙을 넣고 가볍게 섞은 뒤 중탕으로 온도를 40도 정도로 올린다.
2. 핸드믹서로 풍성한 거품이 올라올 때까지 휘핑한 뒤 중력분, 베이킹파우더를 체 쳐 넣고 섞는다.
3. 중탕으로 녹인 무염버터, 사워크림, 레몬제스트가 담긴 볼에 반죽을 조금 덜어 넣고 섞고 본반죽에 넣고 섞는다.
4. 버터를 바른 틀에 반죽을 붓고 기포 정리를 한 뒤 170도 예열된 오븐에서 35~40분 정도 굽고 틀에서 꺼내 실온에서 식히고 밀봉해 냉장실에서 하룻밤 숙성 시킨다.
5. 레몬즙과 슈가파우더를 섞어 글레이즈를 만들고 케이크 위에 흘려 장식한다.

Ingredients
Cake
- 200g sugar (1 cup) (7 oz)
- 5g lemon zest (½ tbsp) (~1 lemon) (0.17 oz)
- 110g butter (room temperature)(½ cup)(4 oz)
- 30ml oil (2 tbsp)
- 3 eggs
- 30ml lemon juice (2 tbsp)(~1 lemon)
- 200g flour (1 ¼ cup) (7 oz)
- 5g vanilla powder (1 tsp) (0.17 oz)
- 5g baking powder (1 tsp) (0.17 oz)
- 3g salt (½ tsp) (0.1 oz)
- 120ml milk (½ cup)
Frosting
- 120g powdered sugar (1 cup)(4.2 oz)
- 10 ml lemon juice (2 tsp)
- 10 ml milk (2 tap)
Bake 160°C (320°F) for 40-50 mins

How to cook
- Grate the zest of 1 lemon.
- Mix lemon zest and sugar.
- Add butter and oil and mix well.
- Add the eggs one by one and mix until the egg disappears completely.
- Add lemon juice.
- Add flour, baking powder and salt through a sieve. Mix until combined.
- Add milk and mix until well combined making sure to scrape down the bowl.
- Transfer to a cake mold lined with baking paper.
- Bake in an oven at 160 degrees for 40-50 minutes.
- Allow to cool in the mold. Set over a wire rack.
Frosting:
- Add the powdered sugar, lemon juice and milk to the bowl beat together until smooth.
- Pour the frosting on the cake.
- Ready to serve.

How to make Lemon Loaf Cake that is super moist and velvety with simple ingredients you can find at home.
Here's what you'll need:
1 cup sugar (200g)
2 teaspoon lemon zest (8g)
1/2 cup softened butter (110g)
2 tablespoons of veg oil
2 large eggs (room temperature)
2 tablespoons of lemon juice (30ml)
1 and 1/2 cup all purpose flour (187g)
1 teaspoon baking powder(5g)
1/2 teaspoon salt(3g)
1/2 cup milk (120ml)
LEMON GLAZE:
1/3 cup icing sugar (50g)
2 tbsp lemon juice (30ml)
