How To make Lemon Loaf Cake
1 1/2 c All-purpose flour
1 1/4 ts Baking powder
3/4 ts Ground ginger
1/4 ts Salt
1 c Granulated sugar
Rind (colored part only) of -2 lemons 6 oz Unsalted butter, softened
3 oz Cream cheese, softened
2 lg Eggs
8 oz Lemon yogurt
GLAZE:
1/2 c Confectioner's sugar
5 ts Fresh lemon juice
1. Heat oven to 325 degrees. Grease an 8 1/2-by 4 1/2-inch loaf pan
and dust lightly with flour. Sift together flour, baking powder, ginger and salt; set aside. 2. Sprinkle several tablespoons of granulated sugar on a cutting
board. Add lemon rind and chop as fine as possible. Transfer to a large mixer bowl and add remaining granulated sugar, butter and cream cheese. Beat on high speed until light and fluffy, 3 minutes. Add eggs, one at a time, mixing well after each addition. Add yogurt and mix well. Stop the mixer and add dry ingredients. Mix just until combined. 3. Transfer batter to prepared pan. Bake until a toothpick inserted
in the center comes out clean, 60 to 70 minutes. Cool in pan for 5 minutes then invert onto a wire rack. 4. Make glaze by mixing confectioner's sugar and enough lemon juice

I’m sharing how to make incredibly moist lemon pound cake from scratch. The cake is perfectly citrusy, brushed with lemon syrup, and finished with lemon icing. A must-try for the upcoming warmer season!????
???? The ingredients to make lemon pound cake
[Pound Cake] for a 8” by 4” (or 1.5 QT) loaf pan
• Granulated sugar 8.5 oz | 240 g (1 1/5 US cups)
• Salt 3/4 tsp
• Lemon zest from 2 lemons
• Unsalted butter (softened) 8 oz | 226 g (2 US sticks)
• Eggs 7 oz | 200 g (4 medium eggs)
• All-purpose flour 8.5 oz | 240 g (2 US cups)
• Baking powder 1 & 1/2 tsp
• Sour cream 6 oz | 170 g (3/4 US cup)
• Honey 1 oz | 30 g (1.5 Tbsp)
• Vanilla extract 1/2 tsp
• Lemon juice 1 oz | 30 g (2 Tbsp)
???? Bake at 325 F | 163 C for about 60 - 75 minutes.
* Adjust the time & temperature accordingly.
[Lemon Syrup]
• Water 3 oz | 85 g (1/3 US cup)
• Lemon juice 1 oz | 30 g (2 Tbsp)
• Granulated sugar 2 oz | 56 g (1/4 US cup)
[Lemon Icing]
• Powdered sugar 5 oz | 142 g (1 1/6 US cups)
• Lemon juice 1 Tbsp + 2 tsp
???? Bake at 325 F | 163 C for 1 minute to let the icing dry and gives it a nice crispiness.

One of my favorite sources for dessert inspiration is the work of several renowned pastry chefs and cookbook authors from the 1980s and ’90s. One such author is Flo Braker, whose impeccable (and impeccably written) recipes are models of the craft. One of Flo’s famous recipes is her Crystal Almond Pound Cake, so-called because the sugary glaze crystallizes into a crunchy shell around the cake. Here I apply Flo’s glazing technique to my olive oil-based Meyer lemon Bundt cake. Because incorporating too much lemon juice into the batter can weaken the structure and throw off the leavening, I add it to the glaze for extra fresh lemon flavor. The olive
oil in the glaze helps to preserve the cake and keeps it moist and delicious for an entire week.

21⁄2 teaspoons baking powder
1 teaspoon Diamond Crystal kosher salt or 1⁄2 teaspoon Morton kosher salt

The cake is soaked in lemon syrup to make it moist.

▶ Pound cake mold 18cm x 8cm x 8cm
160g unsalted butter
100g sugar
45g honey
3 whole eggs
180g flour
3g baking powder =1/2 tsp (Imperial)
Lemon zest for 2 pieces
60g lemon juice
170℃ for 60min
30g lemon juice
10g sugar
100g powdered sugar
15g lemon juice
➢Method
Add sugar and honey to softened butter and mix.
Warm up the whole egg to body temperature.
Add the whole egg little by little to the butter and mix with a spatula.
Add flour and baking powder.
Add lemon zest and lemon juice.
Put the dough in the mold.
Bake in a preheated oven to 170°C for 60 minutes.
Remove the cake from mold and soak it in lemon syrup.
Wrap it with plastic wrap and leave for at least 6 hours.
Put the lemon graze over the cake.
