Creamy Lemon and Herb Pot Roasted Chicken
This is a great alternative to a roast chook. It’s hearty without being heavy; the lemon and herbs create a vibrant freshness that balances the creaminess beautifully. A large Dutch oven or pot, at least 5 litres capacity is best for this recipe.

What do I need?
1 lemon
1 whole chicken (approx. 1.8kg)
80g unsalted butter, melted
1 tsp garlic powder
1 tsp smoked paprika
4 sprigs fresh rosemary
6 cloves garlic, peeled
200ml chicken stock
700g baby potatoes, cut in half
350ml thickened cream
2 tablespoons fresh oregano, roughly chopped
1 tablespoon fresh tarragon, roughly chopped
100ml dry white wine
1 tablespoon fresh parsley, optional
Table salt and ground black pepper
How do I make it?
Pre-heat oven to 220C.
Prick the lemon with a knife in several places and insert the lemon into the chicken's cavity. Place the chicken inside a large Dutch oven or baking dish.
Mix the melted butter, garlic powder, paprika, 1 teaspoon salt and ½ teaspoon of pepper and rub the mix all over the chicken. Add the rosemary, garlic and chicken stock to the pot, cover with a lid and roast for 1 hour.
Remove from the oven and add the potatoes, cream, oregano, tarragon, and white wine. Gently stir to combine, return to the oven and cook, uncovered, for 45 minutes or until the chicken is cooked.
Garnish with parsley and serve.

Lemon Herb Broiled Chicken | #shorts
My husband Joe has his own collection of recipes and dishes that he cooks for us often. When he makes his famous Lemon Herb Broiled Chicken, everyone is quick to come to the table. He uses common spices like salt, black pepper, cayenne, Belizean powder recado which can be replaced with paprika. The ingredient that makes this dish so good in the lemon. He washes the meat first with distilled white vinegar, then rub the spices on the meat, then broil in the oven for about one hour. He turns the pieces of meat about every 15 minutes so they won't burn.

Brine the chicken!!!! Don’t skip this step because I’m telling you, the chicken will be bland all of the flavor will be on the skin
TIP! If you don’t want to have the burn bites on the skin of chicken, don’t add the herbs in the mix and just add them under the skin
Ingredients:
5-6 lbs whole chicken
1 tbsp coarse salt
2 tsp coarse ground black pepper
2 tsp lemon pepper
1 serrano or jalapeño
5 garlic cloves
5 all spice berries
1 tsp peppercorn
2 tsp coriander seeds
1 spring rosemary
1 spring oregano
1 spring thyme
Juice of 1 lemon
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 tbsp tomato paste
10 tbsp unsalted butter
Stuff with lemon wedges, garlic cloves, onion and herbs
1 lb golden potatoes and carrots and 1 1/2 cup Chicken broth

2 1/2 to 3 lbs Chicken ( I used 4 chicken Legs & 3 Chicken thighs)
2 TBS melted butter
1/4 cup olive oil
5 huge cloves garlic
1 and 1/2 TBS fresh Thyme
1 and 1/2 TBS fresh Rosemary
2 TBS fresh parsley
Zest and juice of 1 Lemon
1 TBS Dijon mustard
Salt and pepper to taste
7 medium Potatoes
1 Tbs olive oil ( To drizzle on potatoes)
