Cucumber Lemon Cooler | Homemade Lemon | Summer Cooler Drink
Yes we all drink Lemon juice all Summer but what if you were to add cucumber twist to it, go for this cooler, thank me later. Cheers.
Ingredients :
Approx 150 gm chopped cucumber + some slices
1 cup water
1 tbs sugar (brown sugar/honey - optional)
1 lime juice
Pinch of salt
Ice cubes
Soaked basil seeds (sabja)
Method :
Take a mixer jar, add approx 150 gm chopped cucumber
(Remove skin if it's thick, add mint leaves - optional)
Grind it once, then add some water and again grind it well
(Ratio of water should not be more than 1 cup)
Seive with the help of food strainer to get fine mixture
Further take 1 tbs sugar in a small bowl
(Brown sugar/honey - optional)
Add 1 lime juice
Add a pinch of salt, mix it well and add in cucumber mixture
Take 2 glasses, add some basil seeds (sabja) soaked in water
Add some cucumber slices
Add some ice cubes
Pour cucumber juice
Add more basil seeds on top and put lime slices on the side of glasses
And then your Reviving Cucumber Cooler is ready to beat the Heat!!!

Lemon Cooler Cookies
1 cup salted butter, room temperature
1 cup sugar
1 large egg room temperature
1 tablespoon lemon zest about
1 lemon and the juice
2 cups all purpose flour
1 teaspoon baking powder
Lemon Powder
1/2 cup powdered sugar
1 teaspoon of Lemonade flavored Kool-aid

Lemon Cooler Cookies
Ingredients
• 2 sticks unsalted butter, softened
• 1 cup powdered sugar
• 2 tablespoons lemon juice
• 2 cups all-purpose flour
• ¼ teaspoon salt
• 3 cups powdered sugar
• 2 teaspoon finely grated lemon zest (use more for a stronger flavor)
Directions
Preheat oven to 325°F; line a large baking sheet with parchment paper.
Using an electric mixer on high speed, beat butter and 1 cup of sugar until light and fluffy; about 3 minutes. Beat in lemon juice and zest. Gradually add flour and salt. Batter will be stiff. Cover and chill for at least 1 hour.
Use 1-inch cookie scoop to form small cookies; roll with hands into small balls. Place about 1 inch apart on prepared baking sheets. Bake until set on top and lightly browned around edges, 20 to 25 minutes.
Add 3 cups of powdered sugar to a large bowl. Remove cookies from oven and let cool slightly. Roll warm cookies in sugar to coat. Let cool slightly and then roll cookies in the sugar again. Let cool on wire racks.
