Ingredients
4 bone in chicken thighs
All purpose seasoning
2 lemons
1/4 cup low sodium soy sauce
1/2 cup honey
1/4 cup chicken broth
2 tsp avocado oil
2 shallots, diced
6 cloves garlic, smashed
Chopped cilantro for garnish

Makes 5 Containers (Meal Prep Containers) -
Ingredients -
2 1/2 Tbsp (50ml) - Olive Oil, Divided
2 - Large Heads Broccoli, Florets & Stems Trimmed
250g (8.82oz) - Green Beans, Top & Tailed
1kg (2.2lbs) - Chicken Thigh, Boneless & Skinless, diced
1/2 Cup (125m) - Chicken Stock
3 - Garlic Cloves, Minced
2 - Lemons, Juiced
1/3 Cup (80g) - Honey
1 tsp (2.5g) - Onion Powder
1 1/2 Tbsp (30ml) - Soy Sauce
2 tsp (10ml) - Sesame Oil
1 1/2 Tbsp (12g) - Corn Flour
Seasoning To Taste
Basmati Rice -
350g (12.35oz) - Basmati Rice, Washed
700ml (700g) - Cold Water
Salt To Taste

The broccoli and beans can be replaced with a wide variety of your favourite vegetables. Below is a list of substitutes that work well.

Chicken Breast Instead of Thighs -
This recipe can be made with chicken breast instead of thighs. To do so, prepare the chicken using the same method but cook the chicken for 6 minutes instead of 10 minutes. Follow the remaining steps as per normal.

If there is one chicken recipe I could live off of, it's this Greek lemon chicken. I'm a sucker for skin-on chicken thighs given how naturally juicy and flavorful they are. Plus, I love how it's virtually impossible to overcook chicken thighs in the oven. But this bright and herby lemon chicken marinade is what makes this dish so satisfying.

Garlic Lemon Chicken Thighs and Rice
One-Pot Meals just got easier with the Instant Pot Duo Crisp with Ultimate Lid! Enjoy these Garlicy Lemon Chicken Thighs & Rice for your next quick meal.
Recipe:
2 tbsp olive oil
2 tbsp butter
6 chicken thighs
2 tsp ground lemon pepper seasoning
Juice and zest of 2 lemons
2 cups chicken broth
1 cup long-grain white rice
1 tsp dried basil
1 tsp dried oregano
2 tsp minced garlic
½ tsp salt
¼ tsp pepper
Chopped parsley
1. Using the Sauté setting on your Instant Pot, set to level 4 for 5 minutes. Add olive oil and butter.
2. While waiting for the butter to melt, season the chicken thighs with the lemon pepper seasoning.
3. Add chicken thighs to the Instant Pot, and sauté on each side for 5 minutes. After searing on each side, remove from the Instant Pot.
4. Deglaze with chicken broth, lemon juice, and lemon zest.
5. Add rice, basil, oregano, garlic, salt, and pepper. Stir until combined and add the chicken thighs back into the pot.
6. Pressure Cook for 10 minutes and set to do an automatic Natural Release.
7. Once all the pressure has been released, scoop up both chicken and rice.
8. Sprinkle chopped parsley on top and enjoy!
