How To make Lemon Butter Wafers
3/4 c Unsalted butter
1 c Sugar
2 lg Eggs
1 1/4 Sifted flour
2 tb Lemon zest; grind in grinder
1/3 c Almonds; grind in grinder
In the large bowl of an electric mixer, beat the butter until smooth and add the sugar, beating until creamy. Beat in the eggs, scraping down the sides of the bowl. Add the flour, beating just until combined. Add the zest and almonds, stirring until well incorporated. Cover the bowl with plastic wrap and place in the refrigerator until well chilled at least 3 hours. Preheat the oven to 350~. Butter a nonstick cookie sheet. Using a 1/2tb measure, spoon out lever 1/2 tb of chilled cooked dough onto the cooked sheet, placing them 3" apart. Bake for about 10 minutes or until the cookies have just flattened and are lightly browned around the edges. Cool the cookies on racks. Store in a covered tin. VARIATION-Spread 1 tb seedless raspberry jam on the bottom of 1 cookie, then place the bottom of another cookie on top. This makes a delicious lemon-raspberry cookie sandwich. Super Delicious Lemon Crinkles
How to make a super delicious Lemon Crinkles
Here's what you'll need:
3/4 cup sugar (150g)
Zest of 1 whole lemon (about 1 to 2 tbsps)
1/2 cup butter (softened) 115g
2 eggs
2 and ¼ cups all purpose flour (280g)
1/2 tsp baking powder (2g)
1/2 tsp baking soda (2g)
1/4 cup fresh lemon juice (60ml)
1. Rub sugar and lemon zest together to release lemon oil
2. Add butter and mix until light and fluffy.
3. Add eggs one at a time, mixing after every addition.
4. Sift together, flour, baking soda and baking powder into the the mixture.
5. Mix gently with spatula. Then lastly, add the fresh lemon juice.
6. Cover and let it sit in freezer for 30 minutes.
7. Scoop about a tablespoon or a tablespoon and a half per cookie (35g each).
8. Dredge in granulated sugar and icing sugar.
9. Place on a lined baking sheet.
10. Bake in a preheated oven at 170C or 350F for 10-12 minutes

Lemon Zest 2 tsp
Lemon Juice 1/4 cup, from 1 to 2 lemons
Powdered Sugar 2/3 cup
mix together the sugar and lemon zest until well combined
and the sugar is lightly yellow and fragrant.
Unsalted Butter, softened 1/2 cup
Add the softened butter to the sugar and mix until light and fluffy
Add the egg, lemon juice, and mix well, scraping down the sides of the bowl as needed.
All-Purpose Flour 1 ⅔ cups
vanilla
Baking Powder 1 ½ tsp
Salt 1/4 tsp
and mix until combined
Cover the bowl tightly with plastic wrap.
Place it in the refrigerator for 1 ½ hours (or overnight)
Roll the cookie dough into tablespoon sized balls
roll them in powdered sugar and granulated Sugar and place
them 2 inches apart on the baking sheet.
Line 2 cookie sheets with parchment paper.
Bake 350°F 180°C for 10-11 minutes
Cover the finished dough with cling film and refrigerate for about 1 hour. (can

Lemon Cookies - Delicious Lemon Butter Cookies Recipe
Lemon cookies are one of my favorites, they are easy to make and delicious. Made with a combination of fresh lemon juice and zest, they have a tremendous flavor. Try the lemon cookies with coffee or tea, every bite will melt in your mouth.

???? Lemon cookies Ingredients: makes 8 large or 12 small cookies
1/3 cup Butter, Melted (70g)
1/2 cup Sugar (100g)
Zest of 1 Lemon
1 Egg
1 1/2 tbsp Fresh Lemon Juice
1 cup All Purpose Flour (150g)
1 tsp Baking Powder
1/4 tsp Salt
Powdered Sugar for Coating
Yellow Food Coloring (optional)
???? Lemon Butter Cookies Instructions:
1. In a mixing bowl, add egg, sugar, butter, lemon zest and mix. Add a drop of yellow food coloring, lemon juice and mix
2. Sift the flour, salt and baking soda together then mix together until combined.
3. Cover and chill the dough for at least 30 minutes in freezer.
4. Set oven to 356F (180C) and scoop out portions of cookie dough roughly two tablespoons in size (a little larger is fine too. Place the dough onto parchment-lined baking sheets leaving about two inches of space between the cookies to allow for spreading.
5. Bake at 356 F for 13 minutes or until the edges are set, you don't want these cookies to brown but the bottom of the edge may just be turning golden.
6. Let the cookies cool down completely.
7. Coat the cookies in powdered sugar. I like to use a ziplock bag for no mess.
8. Enjoy!
