How To make Butterflied Cornish Hens Rubbed with Lemon Garlic Butter
4 cornish game hens
butterflied
1 cup Lemon Garlic Butter :
at room temperature
2 tablespoons Ancho powder
****** Lemon Garlic Butter ****** 1 cup fresh lemon juice
8 tablespoons unsalted butter
2 tablespoons fresh garlic -- minced
salt freshly ground white pepper
Prepare a wood or charcoal fire and let it burn down to embers.
In a small saucepan over medium heat, bring the lemon juice to a boil and reduce to the consistency of honey. Set aside
In a food processor, blend the lemon syrup and garlic with the butter and season to taste with salt and pepper. Reserve.
Brush the hens with olive oil and season with salt and freshly ground pepper. Sprinkle with the ancho chile powder and grill skin side down over medium low heat, covered, for 15 minutes. The skin should be brown and crispy. Turn the hens over and cook an additional 5 minuets or until done. Remove from the grill and rub them generously with the room temperature LemonGarlic Butter.

Herb Rubbed Cornish Hens

INGREDIENTS:
2 lbs Whole Chicken (SPATCHCOCKED for faster and more even cooking)
3 1/2 tsps Lawry's seasoned salt
2 tsps paprika
1/2 - 1 tsp black pepper
1/2 tsp onion powder
1 tsp ginger powder
2 1/2 tsps garlic powder
1 tbsp olive oil
3/4 cup honey
3 tbsps soy sauce
2 tbsps lemon juice
2 tbsps unsalted butter
4 - 6 cloves garlic, minced
2 tbsps brown sugar
Browning or Fancy molasses as desired
1. Bake at 375F for 15 minutes and then
2. Bake at 375F for 55 minutes ideally while basting the chicken every 10 - 15 minutes

This is such an easy way to cook a whole chicken and it cooks so much faster than just roasting a whole chicken!
4-6 pound chicken
Lay your chicken so the spine is exposed. With sharp scissors or a knife cut on both sides of the spine and remove. With a sharp knife make a cut on the bottom of the chicken so that is will lay flat. Place your chicken on a baking sheet lined and push down on the center so it lays flat on your pan.
Season with:
Olive oil
1/2 tsp thyme
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
If you want to cook potatoes and/or a vegetable, lay them around your chicken and season them with olive oil, salt and pepper.
Place in a preheated 425 degree oven for 45-60 minutes (depending on the size of your chicken). Check to be sure the internal temperature is at least 165 degrees.

Piri Piri Cornish Hen | Leo Cooks Things
Hey guys, inspired by my recent travels I decided to try my hand at Piri Piri chicken....but instead of chicken I went for a cornish hen...
Here's what you'll need:
-1 cornish hen
-chives to garnish
Piri Piri sauce:
-1 red bell pepper
-1/3 of a yellow onion
-A dozen bird's eye chilis
-5-8 cloves of garlic
-1 tbsp smoked paprika
-1/2 tsp black pepper
-2 tsp salt
-1 tbsp oregano
-1/2 cup white vinegar
-1/2 cup olive oil
-1 tbsp lemon juice
-zest of 1 lemon
First take all of your Piri Piri sauce ingredients and toss them in a blender. Blend until smooth.
Now butterfly the hen, and score the skin. Rub in your sauce, then cook at 425 for 35 minutes. Then broil for 10 minutes. Garnish with fresh chives.
