Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

Baked Cod In Cream Sauce
This baked cod is hands-down my favorite fish dish. It turns out perfectly flaky every time. The flavorful, creamy sauce puts it over the top!

Baked Cod Fish in Oven | Easy Fish Dinner
This baked cod fish in oven is a great and simple recipe that easy enough for a weeknight and delicious enough for a date night! All you'll need is one good heavy pan for this baked cod fish recipe.

Ingredients
• 1.5-2 lb cod fish (loin preferred), cut into 6-8 oz portioned and patted dry.
• 2 cups seasoned panko breadcrumbs
• 5-7 garlic cloves shredded
• 1/4 cup grated parmesan cheese
• 2 tbsp fresh chopped parsley
• 2 tsp lemon pepper seasoning
• 3 tbsp olive oil
• salt & pepper to taste
• 1/4 cup dry white wine
• 1 tsp smoked paprika
• 1/4 cup capers, drained and rinsed
• lemon wedges, for serving
DIRECTIONS
1. Preheat oven to low broil with the rack in the bottom third of the oven. If you don't have a broil setting, preheat oven to 425F and rack in the middle. Also leave fish out of the fridge for 10-20 minutes to come up to room temperature.
2. Mix together breadcrumbs, shredded garlic, parmesan cheese, 2 tbsp chopped parsley, lemon pepper seasoning, 2 tbsp olive oil, salt & pepper. If the mixture looks too dry, add a little more oil until it's not dry looking.
3. Season fish with salt and pepper and heat a heavy pan over medium high heat. Place fish in hot pan seasoned side down and sear for 1-2 minutes. Splash in white wine.
4. Top fish with breadcrumb mixture, sprinkle with smoked paprika and capers. Lightly spray the top of the breadcrumbs with oil to prevent burning and broil/bake in oven for 10-15 minutes or until breadcrumbs are golden brown.
5. Remove from oven and garnish with fresh chopped parsley and lemon wedges.

This easy recipe of baked cod in Greek style is cooked just in 20 minutes. Olive oil, lemon wedges, garlic and dried thyme add a dish magnificent taste and aroma!

✅ Ingredients:
• cod fillet – 1,3 lb | 600 g
• cherry tomatoes – 9 oz | 250 g
• garlic – 4 cloves
• dried thyme – 1 tsp
• 1 lemon
• fresh chopped parsley – 2 tbsp
• salt – to taste
• ground black pepper – to taste
• olive oil – 4 tbsp
✅ You will need:
• baking dish or oven-safe pan
• carving board
???? Preparation:
1. Pour the olive oil into a baking dish, lay out the lemon wedges, cherry tomatoes and garlic cloves. Sprinkle with the dried thyme and lay out the cod fillet.
2. Salt and pepper each piece of fish to your taste.
3. Put the baking dish into the oven preheated to 390°C | 200°C and bake for 15-20 minutes depending on the fillet thickness.
4. Sprinkled the baked cod with the chopped-up parsley and serve to the table.
Oven Baked Cod With Ritz Cracker Topping With Butter, Lemon & Parsley
Oven baked cod with Ritz cracker topping with lemon, butter and parsley is a delicious fish recipe that you can put together in about 20 minutes! Join Eric from Simply Elegant Home Cooking as he demonstrates this New England classic. It is very important to buy the highest quality fish you can find, and be sure you get wild caught fish. The cod can be substituted for other white fish such as halibut or haddock. Also, be sure to use Ritz crackers, which have a delicious buttery flavor and consistency. Other types of crackers will not taste as good!
Ingredients:
-2 pieces of thick cut wild caught cod or other white fish
-2 tablespoons butter
-1 small pack of Ritz crackers (approximately 14 crackers)
-1/2 lemon, cut into slices
-1 large handful of chopped Italian parsley
-Salt and pepper to taste
Directions:
-Remove the cod from the fridge 30 minutes before you plan to cook. Pat it dry with a paper towel.
-Crush the Ritz crackers into large crumbs. This can be done either in their packaging or by placing into a freezer bag and using either your hands or a rolling pin. Be sure not to crush too much. You want large crumbs, not a fine powder.
-In a small skillet, melt the butter over a low heat. Once butter is melted, turn off the heat and add the crushed Ritz crackers, along with the parsley, salt, and pepper.
-In either another skillet or sheet pan, melt a small amount of butter to prevent sticking. While the butter melts, season the cod with salt and black pepper.
-Place the cod into the buttered skillet or sheet pan, and spoon over the Ritz cracker and butter mixture. Do not worry if some of it falls off on the sides.
-Place the skillet into a preheated 375 degree F oven, and cook for about 18-20 minutes or until desired doneness.
-Serve and enjoy with the sliced lemon!
