About a year ago, I started a quest for the perfect breakfast sausage recipe. I used the last of my sausage that I had in the freezer about a month ago, and it was time to make some more. So I figured why not take you guys along, as we re-stock our supply and use a New Improved Recipe.

Base Recipe:
1# Ground Pork
1.5 tsp crushed sage
1 tsp crushed thyme
1 tsp salt
2 tsp brown sugar
.75 tsp ground black pepper
.25 tsp red pepper flakes
.25 tsp nutmeg
.25 tsp cayenne pepper
Extra ingredients used in the video. These are in addition, to the base ingredients listed above:
.25 tsp coriander
3 tsp maple syrup
.5 tsp paprika
+ 5 tsp Powdered Milk per 1 pound of meat (in my case, I had 7 pounds, so that was 36 tsp - or 3/4 of a cup).

Homemade Turkey Sausage: Use seasonings in your cupboard to make lean breakfast sausages out of ground turkey!
This is the best homemade turkey sausage, and here’s why:
1. It’s lean. Buy lean ground turkey. Ours was 93% lean.
2. It’s simple. These seasonings are a simple mixture and you most likely have all of the seasonings in your cupboard.
3. It’s full of flavor. Adjust the amount of pepper in this recipe to fit how spicy you like your sausage. My hubby and I like ours spicy, but the kids like theirs a little bit on the milder side. Either way, these patties are packed full of flavor!
Ingredients
2 teaspoons ginger
4 teaspoons salt
3 teaspoons sage
1/2 teaspoon cayenne pepper
4 teaspoons black pepper
3 pounds lean ground turkey
Instructions
Combine all of the seasonings in a small bowl.
Sprinkle the seasonings over the ground turkey and mix well.
Form it into patties and fry until no longer pink inside, or freeze them for another day!

Grind Your Own Breakfast Sausage
Breakfast sausage is my second favorite breakfast meat and I always like to have some on hand for a quick meal or a super heavy mountain man breakfast that will set your day off right. You can substitute deer (venison) or elk for the pork butt if you add in 30% pork fat by weight.
Once you've ground the meat, you'll want to save some for another day. I review the best ways to freeze your sausage for different kinds of use.
Recipe - scale this to the amount of meat you have
1000g Pork Butt (2lbs 3oz
15g Salt (2.5tsp)
3g Dried Sage (2 tsp)
2g Black Pepper (1tsp)
1g Ground Nutmeg (1/2tsp)
10g Brown Sugar or maple Sugar (1Tbsp)

Pork Sausage Patties
These sausage patties are your favourite pork sausage in patty form. It's so easy - just pork mince (ground pork) mixed with a simple spice blend! Serve for dinner with garlic rice and steamed greens, or enjoy for breakfast with scrambled eggs.

Homemade pork sausage patties
SAUSAGE PATTIES:
500g/ 1 lb pork mince (ground pork) (sub chicken, turkey)
1 tsp dried ground sage (secret ingredient!)
1/2 tsp dried thyme, crushed with fingers
1 tsp onion powder (sub more garlic powder)
1/2 tsp garlic powder (sub more onion powder)
1 tsp black pepper
3/4 tsp cooking / kosher salt (or 1/2 tsp table salt)
1/2 tsp sugar (optional)
COOKING & SERVING:
2 tbsp olive oil
Ketchup
1. Mix patty ingredients. Form 8 patties 1cm / 0.4” thick. Make slight dent in the middle of one side (prevents doming so they cook flat).
2. Heat oil on medium high in non-stick pan. Cook 2 min each side until golden, only pressing down lightly (don’t squeeze all the juices out into the pan!). Serve with ketchup.

How to Make Breakfast Sausage Patties from Ground Pork
Nothing is better than a savory sausage patty for brunch, or in a breakfast sandwich. These cook up fast, and they are very easy to freeze for quick use later on (I cook a big batch, then thaw one for breakfast when I want one). Or, this seasoning would be a great base for biscuits and sausage gravy, or when you put sausage in a casserole.

For every Pound of Meat:
1/2 Tablespoon or 1.5 teaspoon of brown sugar/molasses
1 teaspoon dried sage
1 teaspoon salt (I use smoked salt)
1 teaspoon black pepper
1/8 teaspoon oregano or marjoram
pinch of pepper flakes
pinch of ground cloves
