How To make Lean Pork Breakfast Patties
3/4 c Shreds of whole bran cereal
1/3 c Apple juice
1/2 lb Center cut pork loin,
Ground 1/4 ts Fennel seed
1/4 ts Dried rosemary leaves,
Crushed 1/8 ts Salt
1/8 ts Hot pepper flakes
In medium bowl, combine cereal and apple juice; let stand 5 minutes. Add remaining ingredients; mix well. Shape into six patties. Heat broiler. Place patties on oiled broiler pan. Broil 4-5 inches from heat for 4-5 minutes on each side, or until no longer pink. Makes 6 patties. Microwave directions: Prepare patties as directed above. Place on microwave-safe roasting rack; cover with waxed paper. Microwave on high for 5-6 minutes or until no longer pink, turning patties and rearranging once halfway through cooking. Per serving: calories 80; protein 10g; carb 7g; dietary fiber 2g; fat 3g (0 polyunsaturated, 1 saturated); cholesterol 24 mg; sodium 140mg; potassium 230 mg; exchanges: 1 lean meat, 1/2 starch.

Deer Meat Ground Breakfast Sausage Recipe:
Ingredients:
- 17.5lb fresh deer meat cut into 1-2 chunks
- 7.5lb pork fat cut into 1-2 chunks
- 1 3/4 cups Malcom's Country Sausage Seasoning
1. Combine trimmed deer meat and pork fat at a 70/30 ratio.
2. Add Malcom's Breakfast Sausage Seasoning at a rate of 1 tbsp per total pound of meat.
3. Mix seasoning into meat by tossing by hand, until everything is evenly coated.
4. Run meat through Meat Your Maker Grinder using the largest die plate.
5. Swap to smaller die plate and grind the meat one more time.
6. Divide the sausage into desired package size and vacuum seal using Meat Your Maker Chamber Vac.

How to Make Breakfast Sausage Patties from Ground Pork
Nothing is better than a savory sausage patty for brunch, or in a breakfast sandwich. These cook up fast, and they are very easy to freeze for quick use later on (I cook a big batch, then thaw one for breakfast when I want one). Or, this seasoning would be a great base for biscuits and sausage gravy, or when you put sausage in a casserole.

For every Pound of Meat:
1/2 Tablespoon or 1.5 teaspoon of brown sugar/molasses
1 teaspoon dried sage
1 teaspoon salt (I use smoked salt)
1 teaspoon black pepper
1/8 teaspoon oregano or marjoram
pinch of pepper flakes
pinch of ground cloves
Grind Your Own Breakfast Sausage
Breakfast sausage is my second favorite breakfast meat and I always like to have some on hand for a quick meal or a super heavy mountain man breakfast that will set your day off right. You can substitute deer (venison) or elk for the pork butt if you add in 30% pork fat by weight.
Once you've ground the meat, you'll want to save some for another day. I review the best ways to freeze your sausage for different kinds of use.
Recipe - scale this to the amount of meat you have
1000g Pork Butt (2lbs 3oz
15g Salt (2.5tsp)
3g Dried Sage (2 tsp)
2g Black Pepper (1tsp)
1g Ground Nutmeg (1/2tsp)
10g Brown Sugar or maple Sugar (1Tbsp)
