First Ladies Cookbook ep2 Lady Bird Johnson
I’m cooking a recipe from each First Lady, going backwards. In the 2nd episode, I’m cooking chili con carne. Zephyr Wright was a phenomenal cook and a strong woman of colour who is not well known in history.

Cooking with the First Ladies: National Chili Month
It's the perfect time of year for a chili cook-off! Join Sarah of Instagram's @CookingWithTheFirstLadies to make the Obama family chili recipe and Lady Bird Johnson's Texas chili and famous pecan pie.
Lady Bird mailed copies of her chili recipe and handed out her pecan pie recipe while campaigning for her husband on her whistle-stop tour to the South. This train tour was the first time a first lady traveled without her husband to campaign for him, and she gave a number of speeches to the American public. Lady Bird set the precedent for subsequent campaigning first ladies.
The Obama family chili recipe, known as Presidential Chili, was often enjoyed with friends and could be served over rice or topped with sour cream. Do you have a family chili recipe? Share it with us in the comments!

Lady Bird Johnson's Pedernales River Chili Recipe
The full recipe but it can be halved:
I found this recipe on an old postcard. I made it in honor of Granny who passed away last year. She loved all things Texas but collected postcards from all over the world.
2 lbs ground beef
1 medium chopped onion
2 cloves garlic, minced
1 tsp oregano
1 tsp ground cumin
6 tsp chili powder
4 medium cans tomatoes, undrained
1 cup water
salt and pepper
Fry the beef with onion and garlic until brown. Drain the fat. Add the spices. Add tomatoes and water. Salt and pepper to taste. You can also add a drained can of pinto beans if you like. Simmer on low for 1 hour. Serve with corn bread or crackers or over Frito chips to make a Frito pie. Sprinkle with cheese if desired.
Remembering Lady Bird’s whistle-stop tour for civil rights
Fifty years ago, in October 1964, less than a month before the presidential elections, Lady Bird Johnson boarded a train in Washington to stump through eight Southern states -- a gamble to help win back disaffected voters after the passage of the Civil Rights Act. Judy Woodruff explores a lesser-known part of the legislation’s history with a look at the first lady’s influential whistle-stop tour.
