How To make Lazy Daisy Oatmeal Cake
CAKE:
1 1/4 c Boiling water
1 c Quaker Oats, uncooked
-- (quick or old-fashioned) 1/2 c Butter or margarine; soft
1 c Granulated sugar
1 c Brown sugar, firmly packed
1 ts Vanilla
2 Eggs
1 1/2 c Sifted all-purpose flour
1 ts Soda
1/2 ts Salt
3/4 ts Cinnamon
1/4 ts Nutmeg
LAZY DAISY FROSTING:
1/4 c Butter or margarine; melted
1/2 c Brown sugar, firmly packed
3 tb Half and half or light cream
1/2 c Chopped nutmeats
3/4 c Flaked or shredded coconut
For cake, pour boiling water over oats; stir to combine. Cover and let stand 20 minutes. Beat butter until creamy; gradually add sugars, beating until fluffy. Blend in vanilla and eggs. Add oats mixture; blend well. Sift together flour, soda, salt and spices. Add to creamed mixture; blend well. Pour batter into a well-greased and floured 9-inch square baking pan. Bake in preheated moderate oven (350 F.) 50 to 55 minutes. Do not remove cake from pan. For frosting, combine all ingredients. Spread evenly over cake. Broil until frosting becomes bubbly. Serve warm or cold. COCOA OATMEAL CAKE: Increase boiling water to 1-1/3 cups in above recipe. Use 3 tablespoons cocoa in place of the cinnamon and nutmeg. Prepare and bake as above. In this video, I'll show you how to make this delicious cake the Lazy Daisy way. I'll show you how to make the cake, and then I'll show you how to make the delicious pecan coconut glaze. This cake is perfect for a special occasion or just to satisfy your sweet tooth!
INGREDIENTS
9x13 pan prepared
1 1⁄2 cups very warm milk
1 cup oatmeal
1 cup white sugar
1 cup brown sugar
1⁄2 cup butter
1 1⁄3 cups flour
1 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
1-2 teaspoon vanilla
1 cup raisins, chopped dates,and nuts can be added
• ICING
1/2 cup butter
1 cup brown sugar
1-2 tablespoons cream or milk
1⁄2 teaspoon vanilla
1/2 cup Pecans
1/2 cup coconut
DIRECTIONS
Pour boiling milk over oatmeal.
Set aside to cool. While oatmeal cools mix the cake batter.
Cream sugars and butter.
Add: oatmeal, flour,soda,cinnamon, eggs, vanilla.
Bake at 350 for 30-40 minutes in a greased and floured 9x13 pan.
Make icing. Melt butter and sugar stirring to combine and letting it come to a slow boil. Remove continue to stir. Add Pecans and coconut. Pour over hot cake.

Lazy Daisy Cake is a moist milky cake topped with a coconut caramel topping. This is simply delicious and very easy to make. Well worth trying as it takes little time and is most rewarding.

Holy caramel and coconuts Batman... this one takes the cake! Seriously this Lazy Daisy cake from the 1940's is INCREDIBLE!!!! Somehow, the sponge is soft and squishy and moist, and THEN you coat it in a coconut caramel candy icing!!!!!
If you try any of the recipes on this channel... do this one. Do it. You will NOT be sorry.
And... get this. IT WAS SUPER EASY!!! Had I not been filming it, the whole process would have taken me about an hour or less.

This is a recipe I found in my wife’s huge recipe box all handwritten.
This was my longest recipe yet for recording. I had to use all my bowls for ingredient gathering.
Lots of ingredients, and lots of good ol oatmeal. Yum
This cake is really good and didn’t explode when I tried to remove it from the cake pan.
I am not sure why my camera wouldn’t focus very well. Well I will have to check my settings next time.
This cake was pretty good too, I think I will make it again.
