How To make Lavender Herb Bread
1 pk Active dry yeast
1/4 c ;Warm water
1 c Low-fat cottage cheese
1/4 c Honey
2 tb Butter
1 ts Dried lavender buds
1 tb Fresh lemon thyme
1/2 tb Fresh basil; finely chopped
1/4 ts Baking soda
2 Eggs
2 1/2 c Unbleached flour
Butter In a small bowl, dissolve yeast in water. In a larger bowl, mix together the cottage cheese, honey, butter, herbs, baking soda and eggs. Stir in the yeast mixture. Gradually add flour to form a stiff dough, beating well after each addition. Cover and let rise about 1 hour, or until doubled in bulk. Stir the dough down with a spoon. Place in a well-greased 1 1/2 or 2 qt. casserole or ten 4" individual pie tins. Let rise 30 to 40 minutes, or until doubled in bulk. Bake at 350 F. for one hour for a large loaf, 20 to 30 minutes for small loaves. When done, turn onto a rack, brush top(s) with soft butter, and let cool. rolls. Lavender Loaf Bread Recipe:
INGREDIENTS:
Lavender Bread:
2 cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
3 tablespoons finely chopped fresh organic lavender buds
¾ cup almond milk (or other vegan substitute like oat)
6 tablespoons vegan butter, softened
1 cup white sugar
2 eggs (i use egg substitute here, if you can't find this mix, you can use 1/2 cup plain vegan yogurt)
Lavender Icing:
1 cup powdered sugar
2 tbsp almond milk
1 tablespoon dried organic lavender buds
PREPARATION:
Cake: Preheat the oven to 325 degrees F (165 degrees C).
Grease and flour a 9x5 inch loaf pan.
Combine the milk and lavender in a small saucepan over medium heat.
Heat to a simmer, then remove from heat, and allow to cool slightly.
In a medium bowl, cream together the butter and sugar until smooth.
Beat in the egg until the mixture is light and fluffy.
Combine the flour, baking powder, and salt in a separate bowl.
Stir into the creamed mixture.
Strain the milk in the saucepan and throw away the lavender.
Mix the milk in with the other ingredients.
Pour into the prepared pan.
Bake for 50 minutes in the preheated oven, or until a wooden pick or fork inserted into the crown of the loaf comes out clean.
Cool in the pan on a wire rack.
Lavender Icing:
Combine the almond milk, and powdered sugar together making sure it is smooth with no clumps. Then add in the lavender buds. Place in the fridge while the loaf bakes.
Pour or spoon over the cooled loaf.

Cooking With Tea: How to Make Lavender & Citrus Tea Bread
Diane makes Lavender Earl Grey tea & citrus/lavender infused tea bread!
Ingredients:
3/4 cup milk
1/2 tsp. Lavender Earl Grey tea (purchase at:
3 TBS fresh lavender finely chopped (or 2 TBS dried lavender)
1 TBS orange zest
6 TBS softened butter
1 cup sugar
2 eggs
1/2 tsp. vanilla extract
2 cups flour
1.5 tsp. baking powder
1/2 tsp salt
Glaze:
1/3 cup sifted powdered sugar
1/2 tsp. fresh lemon juice
1/2 tsp. water
1/4 tsp. vanilla extract

Preheat oven to 325F
Grease & flour loaf pan
Infuse warm milk with 1 tsp. loose Lavender Earl Grey for 3 minutes and remove leaves.
Add chopped lavender and orange zest to milk, bring to simmer and then remove from heat and cool.
In mixing bowl, cream butter and sugar until smooth.
Add eggs and beat until light and fluffy.
Add vanilla extract
Combine dry ingredients and blend into creamed mixture with milk, alternately, until well blended.
Pour batter into baking pan and place in 325F oven 50 min.
Glaze:
Combine powdered sugar, lemon juice, water, and vanilla extract until smooth. Spread on hot cake.
This is an easy recipe and poppy seeds can be added, if desired.
