Another new and fun pepper variety for me this yr was Lemon Drop. ????
Lemon drop peppers have some nice heat with a citrusy, lemony flavor, hence the name. I couldn’t quite decide what to do with these peppers until I stumbled upon this recipe from eatingnewmexico.com. I have some fresh lavender growing in my indoor hydroponic garden, so I thought it would be perfect to try this out.????You don’t have to use lavender if you prefer not to - it’ll be just as good.
Now are you ready for this jelly? Here’s the recipe:
Ingredients:
* 3 cups prepared fruit (approx 4 large organic lemons)
* 1 cup finely chopped Lemon Drop peppers (optional or use any other chilies - more or less depending on the heat level)
* 1.5 cups water
* 5 cups sugar
* 2-4 Tbsp fresh lavender chopped (optional)
* 1 pouch Certo Liquid Pectin
Directions:
????Sterilize jars as directed by your canning system.
????Remove peels from lemons, leaving the pith on the fruit. Set fruit aside.
????Cut peels into thin slices about 1/2″ to 1″ long.
????Place peels and water in sauce pot and bring to a boil. Reduce heat and simmer 20 minutes, stirring occasionally.
????Remove pith from lemons. Chop the lemons or puree in food processor, removing the membranes when possible.
????Finely chop the peppers or run them through the food processor until finely chopped but not pureed.
????Add the lemons, peppers, all juices, and chopped lavender to the saucepan, and simmer for 10 min.
????Measure exactly 3 cups of the prepared fruit combination into a large saucepan.
????Add sugar; mix well.
????Bring to a hard rolling boil on high heat, then boil for 1 minute, stirring constantly.
????Stir in liquid pectin and return to a hard rolling boil, then boil for 1 minute, stirring constantly.
????Ladle into warm sterilized jars, leaving 1/4 inch from rim at top. Cover with lids.
????Either follow the directions of your canning system to process the jars for shelf-stable jelly, or let the jars stand at room temperature 24 hours until set (for fridge jelly).

WILD VIOLET JELLY
INGREDIENTS
2-4 cups violet flowers, stems removed (or dandelion flowers)
2 1/2 cups boiling water
juice of 1 lemon
1 box sure jell pectin
3 1/2 cups sugar
DIRECTIONS
Take the violet flowers without stems and place them into a wide mouth canning jar. Pour 2 1/2 cups of boiling water over them. Allow the violet tea to cool and then place in the fridge to steep for up to 24 hours.
Strain the violet tea through cheesecloth. Pour this into a large saucepan.
Add the juice of one lemon to the tea. The colour will change from green to purple!
Add 1 package of powdered pectin and bring it to a boil.
Add the sugar and return the jelly to a boil. continue boiling for 1 to 2 minutes.
Remove from the heat and stir and skim for 5 minutes. Ladle the jam into small containers and allow to cool before refrigerating. Refrigerate up to a month or freeze up to 6 months.
DIRECTIONS FOR DELUXE COOKING BLENDER
Take the violet flowers without stems and place them into a wide mouth canning jar. Pour 2 1/2 cups of boiling water over them. Allow the violet tea to cool and then place in the fridge to steep for up to 24 hours.
Strain the violet tea through cheesecloth.
Add the juice of one lemon to the tea. The colour will change from green to purple! Add to blender. Add 1 package of powdered pectin and set the blender to JAM, press wheel to start.
When prompted to ADD, add the sugar, replace the lid and press the wheel to start.
Pour the jam into small containers and allow to cool before refrigerating. Refrigerate up to a month or freeze up to 6 months.
