A Comforting Greek Stew: Lamb & Cabbage

Ingredients
3 and 1/2 pounds (1.5 kg) lamb
1 large head of green cabbage, chopped
1/4 cup olive oil
2 onions, finely chopped
5 garlic cloves, grated
2 teaspoons salt, or to taste
1/2 teaspoon freshly cracked black pepper, or to taste
15 oz (425g) crushed tomatoes
1 teaspoon dried thyme

Instructions
Heat a large pot over medium-high heat and add the olive oil. Season the meat on both sides with a little salt and black pepper. Brown the lamb in a few baches as to not overcrowd the pan.
Alternatively brown the lamb in the air fryer at 400 °F, 200 °C for 20 minutes. Flip the lamb over halfway through.
Add the onions to the pot and warm through 2-3 minutes. Add the garlic and warm through until fragrant.
Add all of the browned lamb to the pot aong with the salt, pepper, crushed tomatoes, a cup of water, and thyme. Cover the pot with the lid and cook over medium heat for about an hour or until tender and until the sauce has thickened.
Add the cabbage to the pot. Season it lightly with salt and pepper.
Cook over medium-high heat for about 20 minutes or until wilted.
Taste and adjust the seasoning if needed.
Serve with toasted bread and some lemon wedges. Kali Orexi!

∙ 1 kg Lamb
∙ Baby potatoes
∙ 3 onions
∙ 1 can tomato puree 410g ( NOT PASTE)
∙ 2 cans tomato and onion mix 800g
∙ 1 mutton bouillon cube
∙ ¼ cup canola oil
∙ 7 garlic cloves
Spices
∙ 4 tablespoons homemade Cape Malay masala
∙ ¼ teaspoon allspice
∙ 1 tablespoon paprika
Homemade Cape Malay masala
∙ 1 tablespoon dried ginger
∙ ¼ teaspoon cloves
∙ 1 teaspoon Turmeric
∙ ½ teaspoon coriander
∙ ½ teaspoon cumin
∙ ¼ teaspoon cinnamon
∙ 2 tablespoons sugar
∙ ½ tablespoon Mild curry powder
∙ 3 cardamom pods

How to make a super simple tomato bredie | Food | Woolworths SA
Aside from soups and curries, we’re gearing up to make a couple of bredies this winter – and this low-and-slow tomato bredie should be high on your list.
Tomato bredie
Serves 8
Preparation: 30 minutes
Cooking: 40+ min/3-4 hours
Note: This is a very simple recipe – if you want to boost the flavour or add a bit of spicy bite, add 5 ml dried coriander, a pinch of dried ginger and/or 1 t dried chilli flakes when you season. A dried bay leaf or two would not go amiss. And test the recipe as you go – if the abundance of tomatoes makes it too acidic for you, adjust with a teaspoon of sugar.
INGREDIENTS
2.6 kg Woolworths Bulk Stewing Beef
Olive oil, for frying
Sea salt and freshly ground black pepper, to taste
500 g onions (sliced) or baby onions, halved
1 kg ripe tomatoes, blanched to remove the skin
2–3 x 400 g chopped canned tomatoes
10 baby sweet potatoes, quartered
Basil (optional), to taste
Steamed basmati rice, to serve
* Pro tip:
Season and brown the beef, this is the beginning of flavour town! This releases the natural flavour of the meat and caramelises it.
COOKING INSTRUCTIONS
1 Fry the beef in some olive oil in batches in a large saucepan, the same one you are going to make your bredie in so that it can retain all of that delicious meaty flavours. Remove from the pan and set aside.
2 Soften the onions in olive oil in the same pan.
3 Blanch the tomatoes and remove the skin. (Make a cross at the bottom of the tomatoes using a sharp knife, allow to stand in hot water for a few minutes, set aside to cool and then the skin will come off easily.)
4 Add the tomatoes to the saucepan with the canned tomatoes and browned beef. Season and cook for 3–4 hours in the oven at 150°C or on the stovetop, until the tomato sauce has thickened and the beef is tender.
5 Roast the sweet potatoes in the oven or add them to the pot in the last 30–40 minutes of cooking time. Serve with fresh basil and steamed basmati rice.
Cook’s tip: No time for slow cooking? Try Woolies Tomato Bredie Cook-in Sauce ( Just add your meat and cook to package instructions. You could also use lamb or chicken with this sauce.
JUICY JAMAICAN STYLE BROWN STEW LAMB CHOPS
This recipe is traditionally made with chicken, fish or oxtail. I love lamb chops and I love a Jamaican brown stew so I paired the two and it was absolutely delicious. The tenderness of the lamb with a rich flavourful sweet and spicy gravy. So easy to make and it comes together quickly. Served it with rice and peas and fried plantain.
