Chili Recipe
2 TBLS Vegetable Oil
2 Medium Onions, Chopped
3 TBLS Minced Garlic
1 Pound Ground Beef (prefer Coarse Ground Beef for Chili or Chili Meat)
1 Pound Jimmy Dean Hot Sausage
1 Can Diced Tomatoes (14.5 oz)
1 Bottle/Can of your Favorite Beer (I use Michelob Amber Bock)
12 oz Tomato Paste
2 Cups Beef Broth
1 TBLS Brown Sugar
4 TBLS Chili Powder
2 TBLS Ground Cumin
1 TBLS Unsweetened Cocoa
2 tsp Dried Oregano
2 tsp Cayenne Pepper (ground)
2 tsp Salt
2 tsp Black Pepper
1 Can Black Beans drained (optional)
1 Can Dark Red Kidney Beans drained (optional)
1 Small Package Sliced Mushrooms--not canned--eww spit spit (optional)
Heat your oil in the pan, add onions, garlic, and your meats. Stir and cook until meat has just turned brown. Check your fat in the pan, if you need to drain it, go ahead, if its a small amount, keep it, makes the chili that much better.
Now add your remaining ingredients. Stir it all together... Add more Beef Broth if necessary.. Adjust your flavors if necessary. Let simmer on low heat for about 2 hours. Less if you are HAWNGRY. Kick this up with chopped hot peppers added in with remaining ingredients. Whatever you prefer. If you make it too hot, just add a little more brown sugar to help cut it back a bit. I like to sweat when I eat so the hotter the better. A really nice Jalapeno Cornbread goes wonderfully with this. Want to try something different? Cook some Spaghetti Noodles al dente and top it with hot chili, cheese & diced red onion.... we call that Cincinnati Chili!

Homemade Chili Ingredients
2 lbs. Ground Beef (lean works)
1 large Green Bell Pepper
19 oz. can of Kidney Beans
14.5 oz. can Diced Tomatoes (do not drain)
14.5 oz. Crushed Tomatoes
2 cups Beef Broth
4 - 5 Garlic Cloves, minced
1 Red Onion, diced (yellow or white)
1 Jalapeno
1 tbsp Tomato Paste
1 tbsp Brown Sugar
1 tsp Cumin
2 1/2 tbsp Chili Powder (separated in to 1 1/2 tsp and 1 tsp)
Salt and Pepper to taste
Directions
1. Brown ground beef and 1 1/2 tbsp chili powder
2. Use a large pot (I used a 6.5 qt Dutch Oven) brown beef, jalapeno, onions, and garlic. Then drain you fat.
3. Now add the remaining ingredients and bring it to a boil. Then reduce heat to a simmer and and simmer UNCOVERED for 1 hour to 1 hour 40 min or until you've reached your desired thickness.
4. Garnish with green onions and and add sour cream and cheese. Enjoy!!

This Chili Recipe is truly an award winning chili recipe because it has won me 1st place two years in a row in chili cook off competitions at my work This chili recipe beat out 12 people in the 2011 chili cook off. I used the exact same recipe in 2012 and beat out 8 other peoples chili recipes in that chili cook off.
Here's the Award Winning Chili Recipe:
I've omitted the taco seasoning. It's not necessary.
Ingredients:
- 1 lb of hamburger
- 1 lb of pork sausage
- 1 can of Rotel
- 1 can of kidney beans
- 2 cans of chili beans
- 1 jar of chili sauce (12 ounces)
- 1 jar of medium salsa (or homemade if you prefer)
- 1 medium onion chopped
- 1 green pepper chopped
- 1 Tbl mince garlic
- 3 Tbl chili powder
- 1 Tbl Cumin
- 1 Tbl black pepper
- 1 Tbl salt (or to taste)
- 1/2 Tbl tabasco (or to taste)
Directions:
Brown Hamburger, add to crock pot.
Brown sausage, add to crock pot.
Saute onion and green pepper, add to crock pot.
Add all of the remaining ingredients to the crock pot. Cook for 2 hours or longer (longer is better).
Serve with chopped onions, sour cream, shredded cheddar cheese, or whatever else you like.

BEEF CHILI RECIPE | how to make beef chili
1 tablespoon olive oil
1 medium yellow onion chopped
1 green bell pepper chopped
4 cloves garlic chopped
1/2 tsp kosher salt
1 tbsp chili powder
1 tsp dried oregano
1 tbsp tomato paste
1 chipotle chili in adobo coarsely chopped, with 1 tablespoon sauce
1 pound grass-fed ground beef
1- 14.5 ounce can low-sodium chicken broth
1- 14.5 ounce can diced tomatoes
1- 14.5 ounce can kidney beans, rinsed and drained
1- 14.5 ounce can pinto beans
Heat the olive oil in a large pot over medium-high heat. Add the onion and salt and cook for 5 minutes or until translucent. Stir in the pepper, garlic, salt, chili powder, and oregano. Cook for about three to five minutes or until the veggies are fragrant and beginning to soften.
Stir in the tomato paste, chipotle chili, and sauce; cook for another minute before adding the ground beef, breaking it up with a wooden spoon, and cook until the meat is browned (about 5 minutes).
Add the broth and simmer for about 10 minutes. Stir in the tomatoes and the beans; bring to a boil.
Cook, uncovered, stirring occasionally; until thick (about 10 minutes). Ladle chili into bowls and top with your favorite chili toppings (ie. cheese, scallions, Greek yogurt, etc).
STORING LEFTOVERS: Chili con carne will keep in your fridge for about 1 week. Once your chili is completely cooled, just place it in an airtight container (or multiple, if you’d like to meal prep it) without any additional toppings and place it in the fridge. To reheat it, simply pop it in the microwave using a microwave-safe bowl, or you can reheat it on the stovetop.
FREEZING: To freeze, place chili into gallon-sized freezer bags or airtight freezer-safe containers. Freeze for up to 3 months. Remember to label the chili with the date, so you remember when you placed it into the freezer. When you’re ready to enjoy the chili, thaw it in the refrigerator overnight, then reheat it on the stovetop or microwave until it is warmed through.

Gary has won his share of Chili Cookoffs, so this is worth the watch! Even if you have your favorite chili recipe, check this out for a few tips you may not be familiar with. Great cold weather or anytime recipe!
Ingredients:
3 lbs ground beef, drained
1/2 cup red wine vinegar
One Large Bell Pepper finely diced
One Onion finely diced. Both sautéed until soft, Salting vegetables
1 30 oz. can Chili Beans
2 Cans diced tomatoes
1 can drained Kidney Beans
About 32 oz. Tomato Juice
Carroll Shelby Chili Kit (contains chili pepper, cumin, garlic and other spices)
Use the cayenne pepper packet if you like your chili hotter. The masa flour packet is to thicken your chili. All personal preferences.
