How To make Koulourakia (Greek Easter Cookies)
2 1/4 c Flour
1 1/4 ts Baking powder
1/4 ts Salt
1/2 c Butter; softened
1 c Powdered sugar
2 tb Brandy (or milk)
1 ts Vanilla
1 Egg yolk beaten with 1 tbl
Milk for glaze 3 tb Sesame seed
DESCRIPTION: These golden twists are usually baked on Holy Thursday. Preheat oven to 375. Beat together butter and sugar until light and fluffy. Add egg, brandy and vanilla, mixing well. Add flour, baking soda and salt, mixing well after each addition. Working with rounded teaspoons of dough, use palms to roll each piece back and forth on a lightly floured surface until it forms a 6-inch rope. Bring ends together to form a hairpin shape, then gently twist 2-3 times. Lightly pinch ends together. Arrange 1" apart on greased baking sheets, brush with egg glaze, then sprinkle with sesame seeds. Bake 10-13 minutes or until golden. Cool on racks. Store airtight at room temp for 2 weeks. Koulourakia (Greek Easter Cookies)

Ingredients
½ cup butter
½ cup sugar
1 egg
2 tsp. vanilla
1 1/3 cup flour
1 tsp. baking powder
Zest of one orange
Pinch of salt
Egg Wash: Traditional to this recipe, but you could skip.
1 egg add 1 Tbsp. water and beat until well blended.
Directions
Preheat oven for 350 degrees.
In a bowl, cream butter and sugar. Add vanilla, egg and orange zest until mixed.
In another bowl, mix the flour, baking powder and salt. Add this to your butter mixture and mix until just combined. Knead dough in bowl to ensure the dough is smooth. Cover with plastic wrap and chill in the refrigerator for 30 minutes
Taking a tablespoon of dough, roll dough into a rope about 8 inches long. Bring both ends together and twist the dough. Place on greased cookie sheet. If dough becomes to sticky, then put it back in the refrigerator. Lightly brush the top of the cookies with the egg wash.
Bake 20 -22 minutes* or until golden brown. Cool them on a rack or paper towel.
Note from LeeAnn: I baked the second tray for 19 minutes. The cookies were a little softer and less crispy. We liked this better.
Angelo's Mom Makes Greek Easter Cookies (Koulourakia)
Here's a good cookie recipe that's easy to make, and my mom had a lot of fun making it. It's basically a hardened, sweet cookie that you can shape into patterns you like. The ingredients:
-8 cups all purpose flour
-1 cup squeezed orange juice
-Orange zest (grated orange peel)
-4 egg yolks
-3 1/2 teaspoons baking powder
-1 1/2 cups sugar
-1 pound unsalted butter
-3 eggs lightly beaten
Keep the butter out overnight or for a few hours. Add it to a large bowl, then add the sugar, then use an egg beater until the mixture is very creamy. After a few minutes, before you're done mixing it, add the 4 egg yolks.
After a few more minutes, add the orange zest and keep mixing it. Add a little bit of orange juice at a time while you mix the butter and keep adding flour. When the butter/flour mixture gets firm enough knead it by hand while still adding flour and orange juice.
Get a small bowl and mix some flour and baking powder and add it to the butter mix. Then mix that with a spoon and gradually add more flour and baking powder as you keep stirring it.
Knead the dough until it's firm and doesn't stick to your hands. Use unsalted butter and coat a baking pan with it, and make designs with the dough how my mom does or however you like and put them on the pan.
Lightly whip the 3 eggs and brush them onto the designs you've made. Bake them at 350 degrees for about 30 minutes.
That's it! I enjoy eating the dough.

This video will show you my step by step recipe to master the Greek Easter cookies we know and love as Koulourakia. They are tender, easy to make and loaded with Easter flavours like masticha, anise, orange and lemon zests. They are a family favourite. FULL RECIPE BELOW
RECIPE: GREEK EASTER COOKIES - KOULORAKIA
Ingredients:
3 eggs (room temp)
1/2 cup butter (125ml)
3/4 cup sugar (185 ml)
1 cup cake flour (250 ml)
1 3/4 cup all purpose flour (430 ml)
1 tbsp. baking powder ( 15 ml)
grated zest of 1 lemon
grated zest of 1 clementine
1 tsp. ground anise (5 ml)
¼ tsp. masticha – optional
1 tsp. vanilla (5 ml)
pinch salt
1 egg beaten (for brushing on top of cookies )
Preheat oven to 350 Degrees F.
Sesame seeds, optional
Cream butter on medium speed for about 5 minutes until light and creamy. Gradually add sugar and continue to beat on medium speed for another 5 minutes until light and fluffly. Add zest, anise, vanilla and beat until combined. Scrape down sides of bowl. Add the eggs, one at a time and beat well after each addition.
Sift together the flours, salt and baking powder. Add to the egg mixture and beat for 2 minutes on low speed until combined. Turn dough onto lightly floured surface. If dough seems very sticky in your hands than sprinkle with a little flour and knead gently by hand.
Divide dough into 2 logs. Cut each log into 12 equal pieces. Roll each ball into a strip about 6 (15 cm )long and then fold in half and twist like a braid. Place each twist on a baking sheet ( about 2 inches apart)lined with parchment paper or sprayed. Brush each cookie with beaten egg ..
Bake at 350 Degrees for about 17-20 minutes or until golden on all sides.
Makes about 24 medium twists
