How To make Koulourakia (Special Occasion Cookies)
2 c All-purpose flour
1 ts Ground cinnamon
3/4 c Vegetable oil
3/4 c Superfine sugar
3/4 ts Baking powder
1/2 ts Baking soda
1/4 c Brandy
1 c Sesame seeds
Preheat the oven to 400F. Combine the flour and cinnamon in a bowl and set aside. In a medium bowl, beat the oil and sugar with an electric mixer until smooth and creamy. In a cup, dissolve the baking powder and baking soda in the brandy, then add to the oil mixture. Gradually add the flour until the dough is soft but not sticky. Turn out onto a lightly floured surface and knead until smooth. Pinch off pieces of dough the size of small walnuts and form into desired shapes. Sprinkle with sesame seeds and place 1 inch apart on greased cookie sheets. Bake for about 15 minutes, or until golden brown. The Cranston Greek Festival is returning this weekend! In celebration, Tricia Rougas stopped by to show us how to make a classic Greek butter cookie: Koulouria.

Kourabiedes Greek Shortbread
These powdery sugar-coated cookies are known in Greek as Kourabiedes or Greek shortbread. These traditional buttery Greek cookies are filled with interesting flavours of vanilla, orange and almond and decorated with sprinkles of icing sugar. I fondly remember my first ever bite into one of these biscuits, it was the most enjoyable mouth-watering sensation. We were fortunate to have a Greek neighbour's house who always had freshly made Greek cookies when we visited. I have been practising making them over the last few months and each time they have been enjoyed by my friends. They are easy to make and last for weeks, and for Valentines Day They usually formed into circles or crescent shapes, but for fun, I formed them into heart shapes I have called them my love cookie. Try baking these for Valentine's day or a special occasion for someone you love, or a treat for yourself.
