Today I'm going to show you how to make healthy sheet pan pancakes.
These quick breakfast pancakes are great when you want to make pancakes for a crowd or a large family.
This is the easiest way to make fluffy, nutritions and delicious pancakes that everybody will love.

These baked pancakes are light and fluffy as regular pancakes!
They can be made with many different toppings!
SHEET PAN PANCAKES RECIPE
(makes 9 large pancakes)
Ingredients:
1 cup ground oats, or oat flour (100g)
1 cup spelt flour (125g)
1/2 cup tapioca or cornstarch (60g)
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1.5 cups Greek yogurt (375g)
2 eggs
2 tbsp agave syrup, or maple syrup
1 tsp vanilla extract
1/2 cup milk (120ml)
1/4 cup unsweetened applesauce (65g)
*healthy toppings (optional): fresh or frozen berries, sliced banana, dark chocolate chips, peaches, plums, cherries, coconut flakes, sliced almonds and other nuts.
NUTRITIONAL INFO (per large pancake):
168 calories, fat 3g, carb 26.4g, protein 9.1g
Preparation:
In a bowl whisk together oat flour, spelt flour, tapioca starch, baking powder, baking soda and salt.
In the same bowl add the wet ingredients, Greek yogurt, eggs, agave syrup, vanilla extract, milk and applesauce. Whisk to combine, but not over mix the batter.
Pour the batter in a lined and coated sheet pan (I use standard half sheet pan), and smooth the top.
Add your favorite toppings, I use fresh blueberries, sliced banana and dark chocolate chips.
Bake at 400F (200C) for about 15 minutes.
Slice in 9 or 12 equal pieces and serve warm.

French Toast in a Mug ~
Ingredients
30 Lily's Chocolate Chips, 2T SF Syrup, 2 Slices Sara Lee Delightful Bread, 1/4C Unsweetened Almond Milk, 1 Egg, 1tsp Cinnamon, Pinch of Salt
Instructions ~ Beat egg in mug, add syrup, milk, salt and Cinnamon, then bread and choco chips. Stir. Microwave for 2 min, stirring every 30 sec. Enjoy!
Blueberry Banana Muffin ~
Peanut Butter Waffles ~
INGREDIENTS
1 cup Kodiak Buttermilk Pancake Mix
1/2 tsp baking powder
2 Tbsp PB2
dash of cinnamon
1 medium overripe banana, mashed (use 1/2 cup unsweetened applesauce if you don't like bananas)
3/4 cup unsweetened almond milk
1 egg white
1 tsp vanilla extract
20 Lily's chocolate chips
INSTRUCTIONS
In a bowl, mix waffle mix, baking powder, PB2, and cinnamon.
In a second bowl, combine mashed banana, unsweetened almond milk, egg white, and vanilla extract.
Slowly mix wet ingredients into dry ingredients.
Fold in chocolate chips.
Heat Mini Waffle Maker, Add some of the batter to the griddle (just enough to cover the bottom) and cook until griddle stops steaming approximately 3 minutes.
Repeat with cooking spray and batter until the batter is gone (should make 6 mini waffles).
Top with maple syrup, honey, drizzled peanut butter, chocolate syrup, whipped topping, or whatever toppings you like.

THE BEST and Easiest low point muffin! Weight Watchers
If you are looking for a pound cake like textured muffin, you will LOVE the Miracle Muffin! This is my Weight Watchers version of the famous Miracle Muffin. I made my version today as a Cinnamon and Spice version. IT is DELISH! This wonderful low point muffin is only 1 point on blue and purple and 2 on green. You can make this Weight Watchers friendly muffin in all types of muffin flavors. Very easy and fun to make for beginners on Weight Watchers!
2 ripe bananas
2 eggs, beaten
1/2 cup Kodiak high protein baking mix
Flavor of your choice -- I used Pumpkin pie spice and cinnamon,
2 packets of stevia for the topping.
Instructions
To make 6 Muffins. Pre-heat oven to 350 degrees.
Spray muffin tin with cooking spray or a cupcake liner.
Mash 2 large, ripe bananas with a fork. Mix in two beaten eggs. Mix in a ½ cup Kodiak Pancake mix -- any type. I suggest Power cakes.
Sprinkle with cinnamon and sugar substitute and bake.
Bake for 18-25 minutes until golden brown. Muffins will have a dense, pound cake like texture that is FABULOUS!
