Recipe:
What you need? 75g butter 250g brown sugar 125g flower 80g almonds 80ml beer (for preference a sweet or fruity beer)
Step by step: 1/ peel the almonds: drop it in boiling water for 1 minute and peel it, chop it but not to thin.
2/ preheat oven at 190 C
3/ mix first sugar and butter, once mixed add the flower and mix it again, add the almonds and mix it again and finish with the beer. Mix it till a firm dough .
4/ on baking paper make little pancakes. They don’t need to be perfectly round because in the oven they will melt . Make sure you leave some space in between. My first tray i putted to close and i had one big cookie. But i cut it into portions after baking.
5/ bake for 8 - 10 minutes in a preheated oven at 190C
6/ be careful to take it out of the oven. They will be sloppy, but once rested they will be crunchy. Once warm you can twist it or make it round for a nice presentation on ice cream for example.
