How To make Kate's Minestrone Soup
2 tbsp olive oil
1 lg onion
diced
2 lg carrots :
diced
2 lg potatoes diced
1/2 lb green beans :
cut into 1" pieces
6 c water
1/2 sm head of cabbage shredded
16 oz tomatoes, canned
1/2 bag spinach leaves :
coarsely shredded
2 med zucchini diced
6 beef bouillon cubes
16 oz red kidney beans, canned :
rinsed and drained
2 c orzo cooked
1/2 c parmesan cheese :
finely grated
In large saucepot, cook onion, carots, potatoes & green beans until just browned (about 20 minutes). Add water, cabbage, tomatoes with their liquid, spinach, zucchini, & bouillon. Bring to the boil, stirring to break up tomatoes. Simmer, covered, over low heat for about 40 minutes until vegetables are tender. DON'T overcook or they'll get mushy. Heat water for orzo. As orzo cooks, stir beans into the soup & heat for 15 minutes. To serve, ladle soup into the bowls, stirring orzo into each bowl. Top with cheese.

YOU WILL NEED:
1Kg Tomatoes
1 onion
6 -7 Garlic Cloves
2 Sticks Celery
1 Litre Chicken or Veg Stock
1TBSP Tomato Puree
S&P
Pinch of White Sugar
HOW TO:
1.Pop your tomatoes onto a baking tray along with your garlic cloves' drizzle of oil and a sprinkle of salt and pepper, put in the oven at around 180(fan) and cook for about 30 mins or until skin is coming away and starting to caramelise.
2.In the meantime dice your onion and celery and add to pan of heated oil.cook until both soft.At this point you can add any type of herbs you like.I added some fresh thyme but basil would also work great.
3. Once tomatoes have cooked, remove the skin and then pop your peeled toms into the pan along with your onion and celery,Mush about until you have a chunky, bubbly mixture.Pop the garlics out of their skin and add to the pan also.
4.Boil the kettle and break a chicken stock into the pan,pour 1litre of the boiling water into the pan, you will need to let your mixture reduce a little if you are eating chunky, if not boil for 5 mins and then remove from heat and blend until smooth.
5.Put soup back on the heat and your beans, you can use any type of beans,I used cannallini beans.heat them through for a further 10 mins.
6.Serve and Enjoy with a chunk of bread.
