2 c Oatmeal 2 c Flour 1 c Brown sugar 1/2 c Lard 1/2 c Butter 1/2 ts Soda 1/2 c Buttermilk* FILLING 1 lb Dates Water 1/2 c Sugar** or use orange juice *or 1/2 tb lemon juice and fill up to 1/2 cup mark with milk. Mix all ingredients. Chill well. Roll thin, spread half with date filling. Cover with other half. Cut into small rectangles and bake on oiled cookie sheet. Bake at 375F about 10 min. OR cut circles about 3 inches across, put a bit of filling in the middle and fold over. OR cut small circles and put filling on one and cover with another. Strawberry jam makes a tasty filling. FILLING: Cook 1 pound of dates with small quantity of water and 1/2 cup sugar. (**Or use orange rind and orange juice and omit sugar.) Chill. For cookie dough
1/4 cup salted butter 1/4 cup + 1 tbsp powdered sugar 1/4 tsp vanilla essence 2 tbsp milk 3/4 cup maida (all purpose flour)

The reason for the disclaimer is so I don't get negative and hate comments for posting this video of Jim Jam biscuits. While all of you have been extremely supportive and have given so much love to my channel and my work, there is also a very minuscule section of people who have been very quick to jump to conclusions and write hurtful and mean comments about how I'm copying this one particular YouTuber and these are ridiculously baseless because if you compare my recipes, you will know they are NOTHING alike!
That's the reason I felt the need to specify that I had posted about these cookies way before the actual video by this YouTuber was released(Also, nothing but respect to the creator, their work is amazing). If you go through the videos on my channel, you will notice that they are all unique and have some kind of creative factor that you will not find on any other channel! I pride myself on this kind of work and it is this creativity that has helped me stand out and brought me closer to you guys who have made this space into the absolute best community I could ever have wished for.????????
For the Clotted Cream: 1 litre Fresh Cream (25% Fat)
For the Shortbread Cookies: 100 grams salted butter, room temperature 130 grams icing sugar 200 grams all purpose flour 3 teaspoons cold water
Raspberry Jam as needed:
Bake the Clotted cream in a glass oven safe dish at 80 C for 8 hours. Let cool at room temperature and then refrigerate for 8 - 10 hours. Do not stir the cream, just let it sit on its own!
After cutting the cookies and placing on baking tray, refrigerate the cookies for 15 - 20 minutes then bake the Shortbread Cookies at 160 C / 325 F for 16 minutes. Turn the tray halfway through baking so the cookies bake evenly.
