CHIA JAM: Chia seed jam is super quick and easy to make. It’s raw, thickened with chia seeds, and doesn’t rely on pectin or a ton of sugar to set. Not only is it vegan and paleo (as most regular jams are) but it’s also raw, sugar-free, keto friendly.
JAM FROM DRIED FRUIT This raw jam is not only easy and quick (possibly the quickest jam you’ve ever made), but it has also very deep and intense flavor you’ve probably never tasted before. And yes, you can use it just like regular jam – smear it on crepes, use it as a topping for pancakes, make PB&J sandwich with it, add it to smoothies or dressings, or just eat it with a spoon.

Cousins often asked me for this one so I made a video last Christmas. This was the way they were made by my Mom’s Mom’s Mom...here’s the recipe for my Mom’s Jam Jams!
2 eggs, beaten 1 cup shortening 1/2 cup corn syrup Pinch of salt 1 cup brown sugar 2 tsps baking soda, diluted in warm water 1 tsp vanilla Flour
Mix ingredients together until smooth. Add flour while mixing until desired consistency is achieved. Roll out onto floured surface and cut out cookies. Bake at 350 for 5-6 minutes. Cool completely. Pair and fill with jam of choice. Mom always used raspberry. Enjoy or freeze for later. I make one or two batches of these for the holidays. You might want to make a day of it and do a few if you’re having company. Assembly line style is best and many hands make light work.
PREPARATION 1. Preheat the oven to 180˚C (350˚F). 2. In a bowl, whisk together the butter and sugar until combined. 3. Whisk in the egg, oil, and vanilla extract. 4. Mix in the baking powder and 250 grams of the flour with a spoon until combined. 5. Bring the mixture together using your hands to make a dough. 6. Spray a 9 inch/25 centimeter square baking tray with cooking oil. 7. Spread out half of the dough on the tray. 8. Spread the blackcurrant jam on top. 9. With the remaining dough, mix in the remaining 100 grams flour and rub with your fingers to make a crumb like texture. 10. Sprinkle the crumbs on top of the jam. 11. Bake for 20 minutes, until golden brown on top. 12. Leave to cool for around 20 minutes, the jam will be hot! 13. Sieve icing sugar on top. 14. Cut into squares. 15. Enjoy!

Ingredients
3 3/4 cups flour 2 tsp baking soda 1 tsp salt 1 cup butter 1/2 cup brown sugar 1/2 cup molasses 1 egg 1 1/2 tsp vanilla
Directions
1. Whisk together flour, baking soda, and salt in a bowl and set aside.
2. In a mixer with a paddle attachment cream together butter, sugar, and molasses.
3. Add egg and vanilla.
4. Add the flour mixture and mix until dough forms.
5. Roll out the dough on a floured surface to about 1/4 of a inch thick and cut them out with a round cookie cutter.
6. Bake for about 8 minutes 350 degrees, let cool and make sandwiches out of them with raspberry jam and eat them all.
