Jam Recipe
A video containing three types of unusual jams..... Mango, Pear and Tomato.
This 1938 Jam Jams Cookie Recipe, may not be the exact same as the Jam Jams made today in Newfoundland... but this is still a really good jam filled cookie recipe.
Ingredients: 1 cup butter (250 mL) 1 egg ½ cup brown sugar (125 mL) ½ cup black molasses (125 mL) 3 tsp soda (15 mL) 3 Tbsp boiling water (45 mL) Enough flour to make a soft dough
How to make gooseberry jelly:
Method: Preheat oven to 180ºC (350ºF) Cream together butter, brown sugar and egg. Beat in molasses. Dissolve soda in boiling water - straight from the kettle is OK. Beat the water soda mixture into the batter. With a wooden spoon slowly mix in all purpose flour until a soft dough forms. On a floured surface roll out dough to about an 1/8” thick and cut with a cookie cutter. Bake for 6-8 minutes. While still hot spread on your favourite jam and stick together like a sandwich.
Cousins often asked me for this one so I made a video last Christmas. This was the way they were made by my Mom’s Mom’s Mom...here’s the recipe for my Mom’s Jam Jams!
2 eggs, beaten 1 cup shortening 1/2 cup corn syrup Pinch of salt 1 cup brown sugar 2 tsps baking soda, diluted in warm water 1 tsp vanilla Flour
Mix ingredients together until smooth. Add flour while mixing until desired consistency is achieved. Roll out onto floured surface and cut out cookies. Bake at 350 for 5-6 minutes. Cool completely. Pair and fill with jam of choice. Mom always used raspberry. Enjoy or freeze for later. I make one or two batches of these for the holidays. You might want to make a day of it and do a few if you’re having company. Assembly line style is best and many hands make light work.

Blueberry Jam Jams - Traditional Newfoundland - Bonita's Kitchen
Welcome to Bonita's Kitchen! Today we will be making Blueberry Jam Jams, made with molasses cookies and blueberry jam. . See recipe below! Our website link: Our cookbooks link:
Ingredients for Cookies: ½ Cup molasses 3/4 Cup soft unsalted butter 1 Cup brown sugar 1 Tsp ground ginger 1 Tsp cinnamon 2½ Cups sifted flour 1 Tsp baking soda 1 Lg. Egg
Method:
In a large bowl, add butter, brown sugar, mix together until creamy then add your spices, baking soda and molasses continue mixing. Then crack your egg in a little cup and mix, then add to your mixture.
Shift your flour in the mixture, continue mixing with a wooden spoon or fork until all blended then finish by mixing with your hand until it forms into a ball.
When dough have formed into a ball, place on the counter top with some flour so it's not sticky, then take off 1 inch pieces to make little cookie balls. Place each one on a cookies sheet with parchment paper on sheet to stop your cookies from burning. Continue layering each ball on the cookie sheet about 1½ inches apart so they don't touch while baking.
Preheat oven to 350°F and set timer for 10 to 12 minutes, then when baked remove from oven let cool for 10 minutes before removing them from cookie sheet.
Makes about 30 cookies that's 15 jam jams.
Jam jams:
After cookies have cooled, place them on a plate upside down. Take one cookie and scoop 1 tsp of blueberry jam, then place the other cookie on top. Continue doing this until all cookies are used. If you only like to bake half of your dough you can place the other half in a freezer bag and freeze them to use another time.
You can find a recipe for blueberry jam on my youtube channel under Bonita's kitchen if you like to make it yourself. You also can use any type of jam or icing sugar for this recipe.
I apologize in advance if anything in this video is not clear or miss read, please follow my recipe when making this dish.
