How To make Jambalaya One Pot Meal
2 tablespoons olive oil
2 cloves garlic
minced
1/2 cup chopped onion
1 stalk celery :
sliced
1 medium green bell pepper, seeded -- cut into strips
1 cup long-grain white rice
16 ounces canned stewed tomatoes
1 cup water
1/8 teaspoon hot pepper sauce optional
1/2 cup chopped cooked ham (optional)
8 thin slices chorizo or other spicy sausage
1 teaspoon dried thyme or oregano
1 teaspoon salt
freshly ground pepper :
to taste 1 pound medium shrimp shelled and deveined
lemon slices and minced parsley :
for garnish
1. In a large skillet or paella pan, heat oil over medium heat. Add garlic, onion, celery, and green pepper and saute just until softened (about 3 minutes).
2. Add rice, tomatoes and their juice, the water, hot-pepper sauce, ham (if used), chorizo, thyme, salt, and pepper. Bring to a boil, cover, reduce heat, and simmer 15 minutes.
3. Quickly add shrimp, cover, and cook 5 minutes longer, or until rice is tender and shrimp have turned pink.
4. Toss with a fork. Garnish with lemon and parsley.
Paella One-Pot Meal: In a large skillet or paella pan, heat 2 tablespoons olive oil. Add 2 cloves garlic, minced; 1/2 cup chopped onion; and 2 hot or mild chorizos, broken into pieces, casings removed; saute 3 to 5 minutes. Add 1 cup long-grain white rice; 2 cups chicken stock; 1 whole boned chicken breast, cut in strips or bite-sized pieces; 1/8 teaspoon saffron or 1/4 teaspoon ground turmeric; 1 teaspoon salt. Season with pepper to taste. Bring to a boil, cover, reduce heat, and simmer 15 minutes. Then add 10 ounces frozen petite peas or 1 can (16 oz) artichoke hearts, drained, and 1 pound medium raw shrimp, shelled and deveined. Cover and cook 5 minutes longer.

Ingredients (Grocery List)
1/4 cup butter
12 oz andouille sausage
1lb Ground Pork Sausage (regular or spicy)
1 lb shrimp
1 cup diced onion
1 cup diced celery
1 cup red bell pepper
1 Jalapeno
2 tsp minced garlic
2 tbs tomato paste
2 tsp Worcestershire sauce
4 cups stock (chicken or seafood)
2 cups medium grain rice
10 oz shredded chicken (optional substitution for pork sausage)
Cajun seasoning
Salt, pepper
Green onion
Parsley, rosemary, thyme, bay leaf
Directions:
Heat Dutch Oven and add ground sausage. Once ground sausage is broken up and starting to brown, add in andouille sausage and half of the butter, cook until completely browned, about 5 minutes. Remove the sausage with a slotted spoon.
Cook and stir onion, celery, and red pepper in the butter remaining in the pot until the onion becomes translucent, 5 to 10 minutes.
Stir garlic into the onion mixture; cook and stir together for 1 minute.
Add Chicken Base and mix to incorporate with the vegetable mixture; cook and stir another 3 to 5 minutes. (You can add tomato paste here too if you like)
Return andouille sausage to the pot along with your ground sausage, Worcestershire sauce, Cajun seasoning, and black pepper; stir to combine.
Stir rice into the mixture, then add your chicken stock and bring to a boil. Place a cover on the pot, reduce heat to simmer on medium-low, and cook until the rice is tender, 20-25 minutes. (Important: do not stir the rice too often. If you over-work the rice, it will lose it’s texture and become mushy. Keep the rice off the bottom of the pot occasionally to prevent burning, but do not over-stir the mixture)
Add shrimp at the end. Increase heat to medium-high and cook until the mixture comes to a boil; reduce heat again to medium-low and cook uncovered another 10 minutes, stirring occasionally. Add the remainder of your butter and any additional seasoning, (Cajun and/or cayenne to adjust heat as needed)
Garnish with chopped parsley and/or green onion.

Let's Make Sausage and Shrimp Jambalaya - A Delicious One-Pot Recipe
I have become a real fan of Southern food and one of my all time favourites is Jambalaya. There is nothing better than a big plate of this comfort food at any time of the year. I usually kick back with a beer and a side salad and enjoy my jambalaya.
As with any dish, it can be made with different proteins, but the two I like the best are sausage and shrimp. You can use any size of shrimp but get the best quality you possibly can. In terms of the sausage, try and find the traditional angulate sausage but if not chorizo Will do. Of course, if you can't find chorizo, use a good hot Italian sausage.
I usually make my own creole sausage from scratch, but you can buy in the store as well. If you can't find creole, Cajun works just fine.
One other tip I didn't say in the video, try and use the petite Italian diced tomatoes. You can use any type of diced tomatoes, but the Italian tomatoes just add that additional sensational flavour. Believe me guys, they are a must try.
The great thing is, it can be made in one pan in about 40 minutes. Life certainly doesn't get any better.
