How To make Jam Shortbread
1 c Sugar
1 c Butter; softened
1 lg Egg
1/2 ts Almond extract
2 c Flour
1 c Almonds; finely chopped
3/4 c Tart cherry or raspberry
; preserves Recipe by: -BELLE BESTOR- 1. 325 oven. Grease a 9x12" cake pan. Cream together sugar and butter.
Add the egg and almond extract and beat until the mix is light and fluffy. Gradually stir in the flour and the almonds, forming a stiff dough. 2. Divide the dough in half; wrap one half in plastic wrap and chill.
Press the remaining dough into the bottom of the pan in an even layer. Spread the preserves in an even layer on the dough, keeping it 1/4" from the sides of the pan. Roll out the chilled dough half between 2 sheets of wax paper to a 9 x 12" rectangle and press this dough into the pan. 3. Bake until golden brown, about 1 hour. Place pan on a wire rack and cut the shortbread into 1 x 1 1/2" bars, leaving them in the pan to cool completely. Remove to tightly covered containers and store in a cool place. Valentines' day or not is never too late or too soon to celebrate love with these delicious Jam Cookies.
Recipe:
195 g all-purpose flour (1 cup + 1/4 cup + 1 tbsp)
120 g salted butter (1/2 cup)
80 g powdered sugar
2 yolks
lemon zest
Jam:
500 g fruit (17.6 oz)
2 tbsp honey
lemon zest (optional)
*For best results, I suggest using grams as a unit of measure.

Ingredients:
1 cup (230g) Butter, softened
2/3 cup (85g) powdered sugar
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1 Egg yolk
2¼ cups (280g) Flour
Jam of your choice
Directions:
1. Line two baking sheets with parchment paper and set aside. Preheat oven to 170°C (340°F).
2. In a large bowl cream butter and powder sugar until smooth and creamy. Add egg yolk, vanilla extract and mix until combined. Add flour, salt and stir until incorporated and dough is formed.
3. Using a one-tablespoon cookie scoop or measuring tablespoon take 1 tablespoon of dough and roll into balls.
4. Then place the balls on prepared baking sheets. Slightly flatten the balls and then make an indentation with your thumb or with a back of a spoon into each ball. At this stage, if dough is too soft, refrigerate for 30 minutes. Then, fill each with cookie the jam.
5. Bake for 12-15 minutes, the cookies should still be pale, but slightly golden at the bottom.
6. Dust with powdered sugar (optional) and allow to cool on a wire rack.

Shortbread
butter - 100 g
Sour cream - 70 g
Powdered sugar - 100 g
Yolk - 2 pieces
All-purpose flour - 300 g
Baking powder - 10 g
Vanilla sugar - 10 g
Custard
Milk - 250 ml
Yolk - 2 pieces
Sugar - 60 g
Vanilla sugar - 1 tsp
Corn starch - 20 g
Butter - 30 g
Strawberry jam - 120 g
Oven - 180 C / 356 F
Time - 30-40 minutes
