Classic French Mussels Recipe - Moules Marinière with White Wine & Garlic Butter Sauce
Here’s one of the most simple and romantic recipes you can add to your cooking arsenal - a classic French mussels recipe - also known as Moules Marinière - served with white wine and garlic butter sauce.
This timeless French bistro dish can be found on menus throughout Paris and London, as well as most seafood restaurants here in California. It looks fancy and complicated, but in fact it’s one of the easiest dishes you can make. Serve with a good crusty French roll or crispy salted French fries as an accompaniment. You’re going to love this!
Classic French Mussels Recipe - Moules Marinière with White Wine & Garlic Butter Sauce
1.5 pounds fresh mussels (we used Penn Cove, Washington mussels)
2 tablespoons extra virgin olive oil
2 heaping tablespoons of my garlic-shallot puree (or) 4 cloves garlic and one small shallot, minced
1 cup Chardonnay, or other white wine
1/2 cup heavy cream
4 tablespoons Kerrygold Irish butter (we used salted)
1/4 cup of chopped Italian parsley
Kosher salt to taste
Accompany with: Fresh baguette, toasted with butter - or crisp cooked French Fries (for dipping!)
Prepare mussels by rinsing in cold water, removing dirt and debris. Remove “beard” by pulling toward the hinge of the shell. Check for cracked or dead mussels and discard. You can tell if a mussel is dead by tapping on its shell. If it closes, it is good and still alive. If it does not close, discard. Fresh mussels should smell like the ocean and be moist, black and shiny.
Once mussels have been cleaned, prepare a large stock pot or dutch oven. Heat olive oil in the pot over medium-high heat. Add the garlic and shallots. Stir for a minute.
Add mussels and stir to coat the mussels with the oil and garlic shallot puree. Add butter, and lightly stir until melted. Add wine and stir lightly. Add the heavy cream, parsley and salt to taste- about two good size pinches. Stir to mix all ingredients.
Cover and reduce heat; simmer 10-15 minutes, stirring half way through. Serve mussels immediately with a crusty toasted baguette or crispy French Fries (for a Moules Frites recipe). Add more fresh chopped parsley as garnish on both the mussels and the garlic toast/French fries.

4 pounds fresh Mussels in shell
Olive Oil
1 cup chopped Yellow Onion
4 cloves Garlic, chopped
½ cup chopped fresh Parsley
¼ cup fresh Basil
½ teaspoon Hot Red Pepper Flakes
1 quart Peeled Tomatoes
1 teaspoon Salt or to taste
¼ teaspoon Black Pepper or to taste
½ teaspoon dry Oregano

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.

Mussels with garlic white wine broth

***RECIPE, MAKES ONE BIG PORTION, MULTIPLY AS NEEDED***
1 lb (454g) live mussels
1 cup white wine (237 mL)
4-5 cloves of garlic
1 small shallot
1 lemon (one is enough for a few portions)
1-2 tablespoons butter
1-2 tablespoons olive oil
red chili flakes
fresh herbs (I like fennel fronds)
salt
pepper
Pull any beards off of the mussels and wash them clean. Peel and chop the garlic, thinly slice or chop the shallot, pick and chop the herbs.
Melt the butter in a pot on moderate heat (I don't like to let the butter brown), dump in the garlic and shallot and cook them for a minute. Put in the wine and bring it to a boil. Grate in some of the lemon zest. Put in as many chili flakes as you want and grind in some pepper. Pour in the oil.
Dump the mussels in the pot, stir them around, cover and let them steam for a couple minutes before you start checking on them. Cook until the mussels open up, and stop before the meats appear to shrink — maybe 5 minutes, total. While you're waiting you can cut the lemon into wedges for the table.
Use a slotted spoon to fish the mussels out to a serving bowl. If you see any that didn't open, either toss those, or hold them over somewhere that's not the pot or bowl and pry them open — if they look and smell good inside, they're probably fine.
Taste the broth and consider adding salt and maybe a little lemon juice. Stir in the fresh herbs at the last second and pour the broth over the mussels. To eat them, I like to pull off the top shell (the one that isn't connected to the meat) and discard; take the shell with the meat and dip it into the broth to fill it up; slurp; repeat.
