How To make Italian Style Vegetables with Pasta (Lf)
2 tb Stock, Vegetable;*
1 ea Pepper, red; seeded and
-coarsely chopped 1 ea Pepper, green; seeded and
-coarsely chopped 1 ea Pepper, yellow; seeded and
-coarsely chopped 2 sm Zucchini; cut into 1/2 inch
-slices 1/2 md Onions, red; chopped
1 cl Garlic; minced
14 oz Tomatoes, whole; peeled in
-sauce 4 lg Tomatoes, sun-dried; softend
-& chopped 2 tb Fresh oregano; chopped or
-1/2 tsp dried 2 tb Fresh basil; chopped or
-1/2 tsp dried 1/2 ts Salt, sea;
1/2 ts Pepper, black; freshly grnd
4 ea 2 1/2 oz servings of your
-favorite pasta
PER SERVNG=1C PASTA&1C SAUCE:

481 1/4 x *mg sodium Heat a large skillet. Add the stock and all the ingredients except the pasta. Cover and cook over medium-low heat for 15 to 20 minutes, or until al dente. Cook the pasta according to the package directions. Drain well and serve with the vegetable sauce. Makes 4 servings. One serving is equal to 1 cup pasta and 1 cup sauce. *I used the water from soaking the sun-dried tomatoes instead of the vegetable broth. We really enjoyed this, it's DELICIOUS! 99 year old Marietta is still going strong - we first met her in Calabria 18 months ago - and we caught up with her in Rome. This is one of her regular pasta dishes which everyone can adapt and make their own. Stew onion, carrot and celery before adding about 500g of greens like chard, cabbage, dandelion, kale and so on. Add a fresh red chilli if you like. Pour over some tomato passata, season with salt and leave to simmer for 20 minutes.
For her pasta, Marietta uses semola rimacinata/durum wheat flour and water. Allow 300g flour, and 145g of water with a pinch of salt.

1/3 Cup (80ml) - High Quality Olive Oil
6 - Cloves of Garlic, Thinly Sliced
1/4 Bunch (10g) - Flat Leaf Parsley, Finely Chopped
1 tsp (1g) - Dried Chilli Flakes
Seasoning to Taste
Traditionally this recipe isn't served with and cheese but by all means add some freshly grated Parmesan to top this off.

Easy Vegetables pasta with Indian spices.
Ingredients:
Pasta (i used penne pasta)- 1 cup
Water (to boil pasta)
Capsicum (sliced)- 50 gm
onions- 2 (sliced)
tomatoes- 2 (sliced)
carrot- 1 (sliced)
cabbage- 1 cup (shreded)
Salt to taste
Red chilly powder- 1.5 tsp
Turmeric powder- 1 tsp
Coriander powder- 1 tsp
Water (to boil pasta)
