How to Prepare 1. Prepare veggies: Remove sausage casings; chop green onions, peppers, garlic, and onions in ¼ inch pieces. Set aside garlic. 2. Sauté veggies: Heat ¼ cup of Vito & Joe’s Olive Oil; sauté chopped veggies (excluding garlic) until caramelized, then add garlic and simmer. 3. Brown meat: In another pan, heat ¼ cup of Vito & Joe’s Olive Oil; brown sausage, ground beef, and pancetta for about 6 minutes, stirring constantly. 4. Deglaze and season: Add butter to veggies, deglaze, then simmer. Lower heat. Add spices to browned meat, simmer for 2-3 minutes. Combine sautéed veggies with meat. 5. Add tomato paste: After 1 minute, add tomato paste to the mixture. 6. Deglaze with stock: In the veggie pan, deglaze with 1 cup of vegetable stock. Add 1 cup of stock to the meat pan. Add remaining 2 cups of stock to the meat and veggie pan. 7. Simmer: Reduce heat, let the chili simmer. 8.
