How To make Irish Hot Pot
6 md Potatoes peeled and sliced
-thin 2 md Onions sliced thin
3 Carrots scraped and sliced
-thin 1/4 c Cooked rice not instant
1 cn (14.5-oz) peas with liquid
1 pk (20-oz) sausage links/
-ground chuck browned in -amounts you like 1 cn (15-oz) condensed cream of
-tomato soup diluted with a -soup Can of water Salt and white pepper -to taste In a buttered, 4 quart casserole layer the potatoes, onions and carrots, season each layer as you go with salt and pepper. Sprinkle with rice, then the peas with their liquid and top with the meat. Pour the diluted soup over all. Bake, covered, in a 375 degree oven for 1 hour. Remove cover, turn sausages and bake an additional hour, uncovered.

Old Fashioned Lancashire Hot Pot is the quintessential meat and potatoes dish. Tender pieces of lamb, vegetables and sliced potatoes braised in the oven. One pot comfort food for the whole family.
Classic Lancashire Hotpot recipe
In the video today another popular British classic recipe the Lancashire hotpot ( Small & Big). It’s a humble dish with simple ingredients that work together to create the perfect comfort food. Lamb cooked with vegetables and potatoes in gravy served with some vegetables and pickled cabbage. This food is the perfect comfort food as the weather starts to get cooler.
Ingredients
500g Lamb
1-2 Onions
1 Large carrot
2 Bay leaves
Salt & Pepper
1-2tsp Rosemary
1tspThyme
2 tbs Plain flour
A good splash of Worcestershire sauce ( 1 tbs)
550ml Stock ( lamb, chicken, beef)
4-5 Potatoes
Oil ( to cook the lamb)
Melted Butter ( to brush the potatoes)
I cook the Lancashire Hotpot in the oven for 1hour at 180c with the lid/foil covering. Then remove the lid/foil for the last 30-35min until the potatoes are golden brown. The lamb will be cooked perfectly and be nice and tender and you will not have to top up your gravy.
Garden peas with a spoon of mint jelly. ( For those living in Korea you can get this from Emart now)
Pickled red cabbage recipe.
I make this in the same way as I do my pickled onions but I just make sure to add the sugar as it is needed.

Traditional Beef Hotpot Recipe & Cook With Me!
Tonight for tea I am making a traditional beef hotpot! This is essentially just a beef stew with layered potato top :) It is absolutely delicious and perfect for this time of year! Ingredients and method below if you want to give this a go.....

Shopping List:
Half a pound of braising/stewing steak
Half a kilo of sliced potatoes (really depends on the size of dish you're using!)
Two diced onions
two or three chopped carrots
A pint of beef stock
A tablespoon of plain (all purpose) flour
a teaspoon of Thyme
Salt & pepper to taste

Let's Cook!
Set your Oven to gas mark 3 (or equivalent for electric)
Get your oil hot and brown your beef
add your salt, pepper & thyme once browned
Remove your beef from the pan and set aside
Add a knob of butter to your pan, then the onion....cook until translucent and then add your carrots. Cook for another few minutes.
add your flour and mix thoroughly!
Add in your beef stock and stir in until thickened
Add your beef back to the pan and mix everything together.
Transfer your mixture to an ovenproof dish.
Layer your slices of potato on the top....add some knobs of butter.
cover with foil (or a lid if you have one!)
Cook for 50 minutes.....remove your foil or lid and cook for a further 20-25 minutes to crisp up :)
