How To make Indoor Meat Sticks
1 lb Of sirloin
1 Green pepper
1 Zucchini
12 Pearl onions
1/2 lb Mushrooms
MARINADE:
1/2 c Chopped onions
2 tb Sesame seeds
2 tb Peanut oil
1/2 c Soy sauce
1/2 ts Salt
1/4 ts Pepper
2 tb Brown sugar
1 ts Lemon juice
Combine the marinade and set aside.Cut and cube the sirloin and add it to the marinade.Marinate for 2 to 3 hours.Preheat the oven to broil.Cut the green pepper into squares and the zucchini into small wheels. Arrange the meat on skewers and the green pepper,zucchini,onions and mushrooms on separate skewers.Broil the meat on a rack 4" from the heat.Brush with marinade and turn every 2 or 3 minutes.The meat should cook for about 10 minutes and the vegetables for about 5 minutes.

Last week we started easy and made beef jerky. This week we are going to take it up a notch and make ground beef jerky sticks. This is a lot like slim jims but without the casing. This method takes a lot more attention to hygiene as hamburger can carry a lot more contaminates than a roast or steak because there is a lot more surface area and that area has been mixed during the grinding which allows surface contaminates to penetrate deeper into the meat.
I do use a cure when I make beef sticks, I like having the preservative to help combat any organisms introduced by the extra processing to make the ground beef. I buy mine in bulk from a local butcher supply shop. It comes in different spice combinations, and I like to mix the hot sausage mix with the jerky mix.

Now I remember a lot of everything he taught me about making them but measuring out the seasoning was something I honestly never really paid attention to so using the kits takes the thinking out of it.
