How To make Indian Figlets
8 oz Dried brown figs; 1 cup;
-packed 1/2 c Water
2 1/2 c All purpose flour; sifted
1 ts Baking soda
1 ts Cinnamon
1/4 ts Ginger
1/4 ts Nutmeg
1/3 lb Butter; 10 2/3 tbs butter
1/2 c Light brown sugar; firmly
-pack 1/2 c Dark corn syrup
1 ts Vanilla extract
1 Egg
2 Lemons/finely grated rinds
Remove the hard stems from the figs and cut the figs into medium small pieces. Place them in a small saucepan with the water. Bring to a boil over moderate heat; cook, stirring occasionally, for about 5 minutes until the water is absorbed. Set aside to cool. Mix together the flour, baking soda, ginger, salt, cinnamon and nutmeg. Set aside. In a large bowl, cream the butter and sugar, then beat in the corn syrup and the vanilla and egg. Add the mixed dry ingredients and mix until blended. Stir in the lemon rind and then the cooled figs. Drop by rounded teaspoonfuls on a greased cookie sheet 2 inches apart. Bake for 12-15 minutes. The cookies are done when the tops spring back firmly if they are lightly pressed with a finger tip. Remove and cool. -----

3. Pour this milk mixture over the oats in the jar and cover it. Leave it in the fridge overnight.
4. When you're ready to eat, top your oats with dried figs, coconut chips, and granola. Enjoy!

Ingredients-
20 figs (anjeer)
1 cup sugar
Cinnamon
Salt
1 lemon
2 tablespoons vanilla extract
Sun-Dried Figs Preserved with Seawater and Bay Laurel Leaves
In this video you can see how we are harvesting and preserving our figs. The fig tree (Ficus carica) can give a lot of figs in one day, which we can't eat all directly. Therefore we need to preserve them. We preserve our figs by drying them for a few days on the sun. If the figs are dry enough, we put them shortly in boiled seawater and afterwards we let them dry one more day on the sun.
The use of seawater is a traditional way of preserving figs, nowadays people use mostly sulfur (which leaves a less nice taste). We also show in this video an old method for storing our figs. We put the dried figs on a rope and combine them with leaves of bay laurel (Laurus nobilis). Those leaves are a repellent for insects and give the figs an extra nice flavour. The end result is a 'necklace' of tasty dried figs.

NL: In deze video kun je zien hoe we onze vijgen oogsten en conserveren. De vijgenboom kan in een dag een grote oogst geven, die we niet in een keer kunnen opeten. Daarom moeten we de vijgen preserveren. We laten hiervoor de vijgen een paar dagen in de zon drogen. Als de vijgen droog genoeg zijn, koken we ze met zeewater en vervolgens laten we ze nog een dag in de zon drogen.
Het gebruik van zeewater is een traditionele manier om vijgen te conserveren. Vandaag de dag gebruiken de meeste mensen zwavel (dat een minder fijne smaak achterlaat). In deze video is ook een ouderwetse methode voor het bewaren van vijgen te zien. De gedroogde vijgen rijgen we op een draad en worden afgewisseld met bladeren van de laurier (Laurus nobilis). Deze blaadjes weren insecten af en geven een extra lekkere smaak aan de vijgen. Het eindresultaat is een 'ketting' van heerlijke gedroogde vijgen.
