How To make Indian Figlets
8 oz Dried brown figs; 1 cup;
-packed 1/2 c Water
2 1/2 c All purpose flour; sifted
1 ts Baking soda
1 ts Cinnamon
1/4 ts Ginger
1/4 ts Nutmeg
1/3 lb Butter; 10 2/3 tbs butter
1/2 c Light brown sugar; firmly
-pack 1/2 c Dark corn syrup
1 ts Vanilla extract
1 Egg
2 Lemons/finely grated rinds
Remove the hard stems from the figs and cut the figs into medium small pieces. Place them in a small saucepan with the water. Bring to a boil over moderate heat; cook, stirring occasionally, for about 5 minutes until the water is absorbed. Set aside to cool. Mix together the flour, baking soda, ginger, salt, cinnamon and nutmeg. Set aside. In a large bowl, cream the butter and sugar, then beat in the corn syrup and the vanilla and egg. Add the mixed dry ingredients and mix until blended. Stir in the lemon rind and then the cooled figs. Drop by rounded teaspoonfuls on a greased cookie sheet 2 inches apart. Bake for 12-15 minutes. The cookies are done when the tops spring back firmly if they are lightly pressed with a finger tip. Remove and cool. -----

Ingredients
California Walnuts - 2 Cups
Pitted Dates - 400 Gms
Cardamom Powder - 1 Tsp
Corn Flour - 1/4 Cup
Ghee
Water
Method
1. Add ghee to a pan. Roast the whole walnuts on a medium low flame until they
are slightly crunchy and golden brown in color.
2. Chop them once they are cooled down. Keep them aside.
3. Mix corn flour with some water and keep it aside.
4. Add pitted dates to the same pan and pour some water gradually into the pan to
cook the dates.
5. Keep mixing until the dates turn mushy. Let it thicken and be moisture free.
6. Add ghee to the dates and cook for some time till the mixture thickens more.
7. Then, add in the corn flour slurry.
8. Keep mixing until it thickens.
9. Next add the cardamom powder. Mix well.
10. Add the roasted & chopped California Walnuts.
11. Mix well and add more ghee.
12. Grease the tin with ghee and transfer the halwa to it.
13. Cool it down and let it sit aside for 2-3 hours.
14. Once it is set, remove the halwa from the tin and cut it into pieces.
15. Walnut Dates Halwa is ready to be served.

About Barfi
Barfi, barfee, borfi or burfi is a dense milk-based sweet from the Indian subcontinent, and a type of mithai. The name comes from the Hindustani (originally Persian) word barf, which means snow. Common types of barfi include besan barfi (made with gram flour), Anjeer Barfi (made using dried fig & nuts), kaju barfi (made with cashews), pista barfi (made with ground pistachios), and sing barfi (made with peanuts). The ingredients are cooked in a vessel until the mixture solidifies. The mixture is then transferred to a shallow pan and cooled. Finally, it is cut into squares, diamonds, or circular shapes and served.
In addition to nuts, barfi is often flavoured with fruits such as mango or coconut and spices such as cardamom or rose water. It comes in various colours and textures. Barfi is sometimes coated with a thin layer of edible metallic leaf known as vark. It is served at both informal and formal events. Cardamom is the most common spice used to flavor the barfi. |
