How To make Inca Festival Bread
8 tb Butter
3/4 c Milk
2 lg Eggs
8 oz Can cream style corn
1 1/4 c Water ground cornmeal
-(white) 10 oz Sharp cheddar cheese ----
-1/4 cup coarsely grated Remainder cut into 1/4 inch -cubes 1/2 c Coarsely chopped hot
-chilies, fresh or canned 4 oz Can whole-sweet red
-pimentos, roasted 1/2 cut -into long strips, Other 1/2 coarsely chunked 1/2 ts Baking soda
1 ts Salt
In a small saucepan, melt 6 Tbsp. butter over low heat. Do not brown. Preheat oven to 400. Put remaining 2 Tbsp. butter into an 8 inch diameter baking casserole; heat in oven no more than 4 to 5 minutes to avoid browning butter. Rotate and tilt casserole to coat inside. Set aside. In large mixing bowl, beat milk and eggs. Smoothly blend 1 cup white cornmeal, melted butter, corn, diced cheese, chillies, chopped red pimento, baking soda, salt. Mix thoroughly. It should have the consistency of southern cornbread, moderately runny but not down right liquid. If it seems to runny work in 1 or 2 tbsp. white cornmeal. Give butter in casserole a final swizzle, then pour in batter, smoothing it level. Sprinkle grated cheese over top and decorate with pimento strips. Do not cover. Place casserole, exactly in center of oven. Bake until a knife lightly pushed in center comes out clean and dry- usually 40 to 50 minutes. Serve at once. Cut into fairly thin, pie - shaped wedges. (You can let the bread cool to room temperature.) It stores well tightly wrapped in the refrigerator, but it is best not to serve it cold. One loaf makes about 8 servings. Tuh’u. Lamb leg meat is used. Prepare water. Add fat. Sear. Add in salt, beer, onion, arugula, cilantro, samidu, cumin, and beets. Put the ingredients in the cooking vessel and add crushed leek and garlic. Sprinkle the cooked mixture with coriander on top. Add suhutinnu and fresh cilantro.
MODERN RECIPE
INGREDIENTS
- 1lb (450g) Leg of Lamb Chopped into bite size pieces.
- 3-4 Tablespoon Oil or Rendered Fat
- 1 ½ teaspoons Salt
- 2 Cups (475ml) Water
- 12 oz (350ml) Beer - (A sour beer and German Weissbier are recommended, but any non-hoppy beer will suffice)
- 1 Large Onion Chopped
- 2 Cups Arugula Chopped
- 3/4 Cup Cilantro Chopped
- 2 Teaspoons Cumin Seeds crushed
- 2 Large Beets (approx. 4 cups) Chopped
- 1 Large Leek Minced
- 3 cloves Garlic,
- 1 Tablespoon Dry Coriander Seeds
- Additional Chopped Cilantro for garnish
- Samidu* (Something akin to 1 Persian Shallot)
- Suhutinnu* (Something akin to Egyptian Leek for garnish)
*These ingredients have no definite translation; the shallot and leek are the best guesses of scholars at Yale and Harvard Universities)
METHOD
1. Add the oil/fat to a large pot and set over high heat. Sear the lamb for several minutes in the oil until lightly browned.
2. Add the onions and let cook for 5 minutes, then add the beets and let cook for 5 minutes. Then add the salt, beer, arugula, cilantro, samidu (shallot) and cumin and bring to a boil. Mash the garlic into a paste and mix with the leek, then add to the pot.
3. Lower heat to medium and let simmer for approximately 1 hour, or until the beets and meat are cooked to your liking.
4. Once cooked, dish it into a bowl and sprinkle with coriander seeds. Garnish with fresh cilantro and suhutinnu (leek)

In Praise of Nature - Inca's Traditions & Beliefs
Centered in Peru, The Inca Empire was the largest empire in Pre-Columbian America. Today, their descendants, the Quechua Indians still practice an appreciation to the earth ceremony - Pachamama ritual, that is handed down by their ancestors. Burning Holy Wood (Palo Santo) as incense is believed to thoroughly deliver offerings to Pachamama. Another important plant is the Eucalyptus tree, which was brought to Peru during Spanish conquest. A fast growing plant, able to survive in the harsh Andean climate, became part of their culture. The scented wood is used in a carefully guarded bakery recipe in making Chuta bread, uniquely made in Oropesa. Chuta bread is a Peruvian tradition symbolizing warmth, affection and respect.
